Alexandre Chaillon’s Stellaire de Breux Blanc de Blancs Brut Nature 2020 comes from Chardonnay grown in the gypsum soils of Brugny, in Champagne. After 12 months in barrels and stoneware eggs, it offers citrus, cream and saline notes. Its mineral texture pairs with oysters. Enjoy now or within 3 years.
An artisanal estate rooted in the hillsides of Pierry and Brugny, where family heritage meets a pursuit of mineral purity.
- Terroir: The Campanian gypsum soils of the Terre de Breux lieu-dit in Brugny give the wines chalky tension and distinctive salinity.
- Winemaking: Made in barrels and stoneware eggs without artifice to preserve the Chardonnay’s direct expression.
Tasting notes for Alexandre Chaillon Stellaire de Breux Blanc de Blancs Brut Nature 2020
Appearance: Pale gold in color and crystal clear, with a fine stream of silky, persistent bubbles.
Nose: First, notes of candied citrus—lime and pink grapefruit—followed by a touch of crème fraîche and white flowers, then a subtle saline minerality to round out the aromatic profile.
Palate: A texture both taut and velvety, driven by lively, precise acidity. Citrus zest and flint flavors unfold into a long, saline finish of mineral elegance.
Serve between 8 and 10 °C in a narrow champagne flute to concentrate the aromas.

A vintage marked by balanced ripeness, with cool nights preserving the Chardonnay’s tension and minerality.
- Aging potential: Keep until 2030, or even longer, in a cool cellar (12-14 °C), away from light.
