François Cotat: exceptional Sancerre wines

The domaine François Cotat is a domaine de l'appellation Sancerre whose reputation speaks for itself.
Located in Chavignol, in the Loire Valley, it comprises 4 mythical hectares of Sauvignon. The vines, with an average age of 25 to 30 years, are planted on limestone and clay-limestone soils. The estate, made up of plots in Sancerre Grande Côte and Sancerre Monts Damnés as well as a few vines in Sancerre Culs de Beaujeu, favors a plot-by-plot approach and vinifies each one separately.
Just like his father, who built the estate's reputation (from 1987 to 1998), François harvests his grapes at full ripeness to produce his great age-worthy dry white wines. In warmer years, he will sometimes produce off-dry cuvées named "Paul" in homage to his father.
The estate strives to be as non-interventionist as possible, both in viticulture and in winemaking: in addition to "patient" harvests carried out by hand, the cellar practice excludes the use of added yeasts, new oak, and filtration. Two rackings take place and the wines are bottled early, before summer. The result? Wines of extreme finesse, delicate and well-structured, with a great ageing potential. Up to 20 years of patience may sometimes be needed to discover the full potential of these exceptional Sancerre… Worth every sip!
