Before fully devoting himself to his passion for Burgundy wines, Dominique was a pastry chef in Vesoul. He ventured into haute-couture wine trading at the end of the 1980s. Since 2006, he has owned his own 6-hectare estate, which changed everything as he had not previously made his own wines, focusing solely on ageing them. He also has an integrated cooperage and his wines are generally very much marked by their time in new barrels sourced exclusively from the Tronçais forest. He even experimented with cuvées using 200% new wood (two rounds of twelve months in new barrels). Dominique Laurent neither fines nor filters his wines before bottling. Among his finest plots are a Vosne Romanée 1er Cru Les Suchots, a Nuits Saint-Georges 1er Cru, and grand crus such as his Bonnes Mares and his Echézeaux.

History of Domaine Laurent

The history of Domaine Laurent begins with Dominique Laurent, a former pastry chef from Vesoul driven by a consuming passion for the great wines of Burgundy. In 1987, he embarked on an audacious adventure by creating a "haute couture" négociant business, an innovative approach at the time. With no experience in winemaking, he chose to focus on aging, buying wines just before barreling from carefully selected Burgundian winegrowers. His talent for finding exceptional terroirs and his meticulous approach to aging quickly earned him international recognition, notably thanks to the praise of critic Michel Bettane.

In 2006, Dominique took a decisive step by founding Domaine Laurent with his son Jean. Together, they acquired and leased prestigious parcels, notably from a former winegrower of the Haegelen-Jayer estate in Vosne-Romanée. The father-son duo now cultivates 11 hectares of vines, mainly in the Côte de Nuits, but also in the Côte de Beaune. Their philosophy is based on absolute respect for the grape, with natural practices and precise aging. This transition to a producer role, while continuing the négociant activity, has consolidated Dominique Laurent's reputation as one of the greatest wine artisans in Burgundy.

Terroirs and Vineyards of Domaine Laurent

Domaine Laurent benefits from access to some of the most prestigious terroirs in Burgundy. The estate's 11 hectares extend over renowned appellations such as Clos Vougeot, Echezeaux, Chambertin Clos de Bèze, Bonnes Mares, and Chambolle-Musigny, as well as parcels in Beaune, Pommard, Volnay, Meursault, and Puligny-Montrachet. These vines, often leased from exceptional winegrowers, are predominantly composed of old vines, renowned for their low yield and aromatic concentration.

Dominique and Jean Laurent favor environmentally respectful viticulture, with organic practices and manual work during harvest. Their attachment to the terroir is reflected in rigorous parcel selection, particularly those planted with Pinot Noir and Chardonnay, which fully express the richness and diversity of Burgundy soils. The vines, ideally located, benefit from optimal conditions to produce grapes of exceptional quality, the true raw material of the estate's wines.

Vinifications at Domaine Laurent

Vinification at Domaine Laurent is guided by a quest for purity and authenticity. Unlike his négociant activity where Dominique focuses exclusively on aging, the estate handles the entire process, from vine to bottle. The grapes, harvested manually, are vinified without destemming, a technique that preserves the integrity of the fruit and accentuates the complexity of aromas. The use of sulfur is reduced to a minimum, or even absent, to guarantee "primitive" wines, faithful to their terroir of origin.

The aging process, the estate's true signature, is distinguished by the use of new barrels from the family cooperage. Dominique Laurent, owner of his own cooperage, selects exceptional woods, mainly from the Tronçais or Cîteaux forest, to craft his "magic casks." These barrels, renewed at 100% for certain cuvées, give the wines an elegant structure and refined oak character, perfectly integrated over time. The wines are aged for a long time on lees, without fining or filtration, to preserve their silky texture and aromatic complexity. This meticulous approach makes Domaine Laurent's wines references in terms of finesse and elegance.
