Due to its tannic structure and complexity, it is advisable to decant the wine between one and three hours before serving for younger vintages, in order to allow the aromas to fully develop. The ideal serving temperature is between 16 and 18 °C. For vintages over twenty years old, a gentle decantation will suffice. At the table, Vieux Château Certan pairs magnificently with red meats in sauce, game, truffles or aged hard cheeses — combinations that bring out the depth and elegance of this great Pomerol.
