The vines of Domaine Hubert Lamy are cultivated using organic farming practices (non-certified) and planted at high density to better concentrate the grapes. The various plots are vinified separately using indigenous yeasts, in 600-litre barrels with very little new wood. The ageing process, long and conducted on full lees then on fine lees in cool and humid cellars, preserves the wine's internal energy and contributes to its extraordinary ageing potential.
