The total production of the estate is approximately 4,000 bottles per year only, the result of haute couture work on a few hectares of micro-plots. During the harvest, a team of 40 people picks the grapes by hand to ensure harvesting at the optimal moment of ripeness. This absolute demand at every stage, from the vine to the cellar, combined with a limited surface area and deliberately very low yields, explains the exclusivity of these Champagnes and their strong demand among enthusiasts worldwide.
