From the limestone slopes of Aÿ, this Champagne Brut Non Dosé by Paul Gosset combines Pinot Noir (80%) with a perpetual reserve. With no dosage, it offers notes of golden apple and citrus, a mineral touch and silky bubbles. Ideal with seafood or for 5–8 years of cellaring.
A family estate rooted in Aÿ, where time is measured in generations and muids of tradition.
- Terroir : Chalky and limestone soils of the Vallée de la Marne, between Aÿ, Mareuil-sur-Aÿ and Dizy – an ideal setting for Pinot Noir, the leading grape of these slopes.
- Winemaking : Natural methods, native yeasts and barrel aging produce unadorned champagnes that let the terroir’s minerality speak for itself.
Tasting notes for Paul Gosset Des Jours et des Muids Brut Non Dosé
- Appearance : Golden with green highlights, a silky texture and fine, persistent bubbles, like lace tracing the glass.
- On the nose : Aromas of crisp golden apple, candied citrus, acacia blossom and toasted brioche, lifted by a saline, chalky touch reminiscent of Aÿ’s subsoil.
- On the palate : A lively, precise opening where mineral tension meets notes of ripe fruit and gentle spice, leading to a long, saline finish carried by elegant acidity.
Serve at 8–10°C in a champagne flute or white wine glass to release its full complexity.
Non-vintage
A blended cuvée to which each year contributes its signature, combining the freshness of the 2022 base with the depth of the perpetual reserves.
- Aging potential : 5–8 years in a cool cellar, away from light, to allow its minerality and tertiary aromas to develop.
