Paul Gosset Champagne is a confidential and fascinating grower domaine, established in the heart of Aÿ, a village classified Grand Cru in Champagne. Heir to a family lineage dating back to 1584, Paul Gosset embodies the new generation of the vineyard, crafting artisanal cuvées built around time, aged in demi-muids or in bottles via perpetual reserves. All wines, produced from the three emblematic grape varieties of Champagne (Pinot Noir, Chardonnay and Pinot Meunier), are made in very small quantities, lightly dosed and sourced from committed viticulture.
The history of Champagne Paul Gosset is rooted in one of the oldest lineages of Champagne winegrowers, with origins dating back to 1584. The family estate was built over the centuries on the Grand Cru of Aÿ, the historic birthplace of Pinot Noir in Champagne. After studying oenology and gaining experience abroad, notably in New Zealand, Paul Gosset joined his father Michel in 2016, becoming the seventeenth generation of the family to carry on this winemaking tradition.
His arrival marked a new era for the estate, with the creation of his first personal cuvées. Paul has made time the guiding thread of his range, in reference to the family heritage and the patience required to craft great grower champagnes. Committed to the environment, he practises agroforestry, eliminates herbicides and insecticides, plants oats to decompress the soils and chooses responsible materials (cotton labels, aluminium-free capsules).
The Paul Gosset vineyard covers approximately 2.5 to 3.5 hectares spread across four distinct terroirs in Champagne. The historic heart is located in Aÿ, a Grand Cru village renowned for the power and depth of its Pinot Noirs, with approximately 1.34 hectares planted with this flagship grape variety. The vines also extend to Mareuil sur Aÿ (Pinot Noir, Chardonnay and Pinot Meunier), Dizy (Pinot Noir) and Chouilly, a Grand Cru village on the Côte des Blancs, ideal for Chardonnay. More recently, the estate has expanded towards Vertus and Mutigny.
The soils, predominantly chalky and limestone-rich, characteristic of Champagne, are tended with care and in respect of living ecosystems. Paul Gosset favours sustainable viticulture, free from herbicides and insecticides, promoting biodiversity and the natural balance of the ecosystem. Pinot Noir, the emblematic grape variety of Aÿ, dominates the vineyard planting and brings structure, fruit and depth to the estate's cuvées, complemented by Chardonnay for freshness and Meunier for roundness.
In the cellar, Paul Gosset works with a minimally interventionist approach, inherited from the great Champagne traditions yet tinged with modernity. Fermentations occur spontaneously using a starter culture based on indigenous yeasts, and vinifications take place predominantly in oak barrels, demi-muids of 500 to 600 litres and small tanks. Sulfur doses are limited, ageing is long, and dosages are very low or non-existent, in order to let the terroir and vintage speak for themselves.
Paul Gosset's project revolves around two complementary perpetual reserves. The first, inherited from his father, is kept in demi-muids and has supplied the Des Jours et des Muids cuvée since 2004. The second, named La Montre, is a unique perpetual reserve created in bottles under low pressure: each year, a portion is drawn for the blend and replaced by the new vintage, following a symbolic twelve-year cycle representing the twelve hours of the watch. This dual approach to time defines all the originality of the estate.
Champagne Des Jours et des Muids: the signature cuvée and flagship of the range. This blend of several vintages (perpetual reserve begun in 2004), terroirs (Aÿ, Mareuil sur Aÿ, Dizy, sometimes Chouilly) and grape varieties (approximately 80 to 90% Pinot Noir, complemented by Chardonnay and Meunier) is vinified in tank for one year then aged for one year in 500-litre demi-muids. Brut Nature or very lightly dosed, it offers an intense golden colour, a vinous nose of red fruits, plum and almond, a generous, velvety and patinated palate, with a fine bubble perfectly integrated.
Champagne La Montre: the estate's second emblematic cuvée, drawn from the perpetual reserve in bottles conceived by Paul Gosset. Composed of approximately 60% Pinot Noir, 25% Chardonnay and 15% Meunier, it blends the terroirs of Aÿ, Mareuil sur Aÿ and Dizy. Vinified predominantly in oak barrels and lightly dosed (approximately 2.5 g/l), it reveals an enchanting nose of white flowers, almond and orange blossom, a full, spherical and indulgent palate, carried by beautiful fruit maturity and an exceptionally fine bubble.
Champagne L'Été: a Blanc de Noirs crafted 100% from Pinot Noir sourced from the Grand Cru terroirs of Aÿ and their neighbours. Partially vinified in barrel, this champagne stands out for its density, creamy character and fine tension. The nose unfolds on dried fruits and lightly pastry-like notes, while the palate is rich, comfortable, endowed with dense substance and a brilliant finish. A radiant and precise expression of Pinot Noir from Aÿ.
Coteaux Champenois Rosé La Tonnelle: a nod to a famous French gastronomic guide which, in the 1980s, described the house's wines as wines to be enjoyed beneath a pergola. Produced in very small quantities from Pinot Noir, this Coteaux Champenois Rosé charms with its lightly tinted golden colour, its absence of bubbles (still wine), its nose of bramble, blackberry and blood orange, and its lightly tannic, sleek, tart and clean palate. A rarity for lovers of the still side of Champagne.
Coteaux Champenois Le Rouge d'Aÿ: the house's still red wine, sourced from old Pinot Noir vines planted in 1972 on the Loiselu plot (11.79 ares) in Aÿ. Produced in confidential quantities (approximately 550 bottles per vintage), this red Coteaux Champenois unfolds a refined and silky juice over delicate notes of cherry and spice, with a superb length and great indulgence. A pure and distinguished expression of the Grand Cru of Aÿ in its still form.
