History of Domaine de l'Ours Bleu

Domaine de l'Ours Bleu has its roots in an unusual human adventure, born of encounters, happy coincidences, and a shared curiosity about wine and vineyard work. A promise made in jest last century gradually took shape through friendships among people passionate about viticulture. The first parcels were taken on in 2013, then officially acquired in 2016. Conversion to organic farming began in 2018, reflecting the owners’ commitment from the outset to respecting the environment and producing wholesome, authentic wines that honor their terroir. The first wines were made in 2018, but the founders wanted them to age and improve in the cellar before going on sale. They were therefore aged patiently for several years, and the estate did not release its first cuvées to the public until 2021. Today, Domaine de l'Ours Bleu is recognized as a young estate worth watching closely, driven by Jérôme Baillargeau’s enthusiasm and a decidedly modern approach to viticulture and winemaking centered on precision, depth, and patience.

Terroirs and Vineyards of Domaine de l'Ours Bleu

Domaine de l'Ours Bleu enjoys a privileged location, with its fourteen hectares of vineyards spread across several highly regarded winegrowing villages. Parcels lie around the estate’s headquarters in Montsoreau (Saumur-Champigny appellation), as well as in Fontevraud and Brézé for the Saumur appellation, and in the Indre-et-Loire villages of Savigny-en-Véron and Avoine for the Chinon appellation. This geographical diversity gives the estate access to a wide variety of terroirs and microclimates, allowing its wines to express a distinctive character from each parcel. The soils are predominantly clay-limestone, covered with sand, clay, or gravel, and rest on a foundation of tuffeau chalk known as Turonian, characteristic of the Loire Valley’s great terroirs. This geology gives the wines attractive minerality and refined tannic structure. The entire estate has been farmed organically since 2021, with meticulous soil management favoring practices that respect the environment and ecosystems. Only two grape varieties are planted: Chenin for white wines and Cabernet Franc for reds, rosés, and sparkling wines. This allows the winemaker to master the expression of each variety and craft concentrated wines with a distinctive personality.

Winemaking at Domaine de l'Ours Bleu

The winemaking philosophy of Domaine de l'Ours Bleu rests on a patient approach that respects the fruit, favoring long aging and minimal intervention to let the purity of the terroir and vintage shine through. The grapes are harvested by hand at optimal ripeness, then fermented with indigenous yeasts to preserve the authenticity and distinctive character of each parcel. Extraction is gentle, aiming to preserve the fruit and drinkability while giving the wines structure for aging. Depending on the cuvée, the wines are aged in different vessels—400-liter oak barrels, amphorae, stainless steel tanks, or concrete vats—for at least twenty-four months, allowing them to gain complexity, depth, and harmony. Wines from prestigious parcels, such as the Saumur-Champigny cuvées and the Saumur whites from Brézé, spend time in barrels, which lend them smoky and vanilla notes and a fuller texture. For certain cuvées, such as Le Petit Naturiste, the winemaker favors a natural, low-intervention approach, with little or no added sulfites, allowing the grape variety and vintage to express themselves freely. This rigor and attention to detail in the cellar enable the estate to produce wines with a strong identity, distinguished by pure fruit, natural freshness, and remarkable aging potential.

The wines of Domaine de l'Ours Bleu

The Saumur Blanc Puzzle is the estate’s flagship cuvée and a source of pride, made from Chenin harvested on Brézé’s emblematic parcels. Aged for twenty-four months in 400-liter barrels, it expresses Brézé’s exceptional terroir with precision and depth. High acidity gives it energy and length, balanced by a generous palate with lovely structure. Aromas lean toward white fruit—apple and pear—with caramel and vanilla notes from the aging process.

Le Petit Insolent is an original, daring creation: a blanc de noirs made from Cabernet Franc vinified as a white wine. It surprises with its vivid red-fruit notes, lively freshness, and precise, easy-drinking character. Perfect as an aperitif, it offers a refreshing, original alternative to traditional whites, with pure fruit and immediate appeal.

Le Petit Naturiste embodies the estate’s natural approach: a free-spirited, honest red wine made without artifice. This Cabernet Franc Saumur red is aged without time in barrels and has a light ruby color with bright highlights. The nose opens with vivid aromas of strawberry, raspberry, and cherry, accompanied by delicate floral and spicy notes. On the palate, the opening is supple and juicy, with a light-to-medium body and lovely freshness. Fine, understated tannins give way to a clean, fruity, easy-drinking finish marked by a striking sense of purity.

The Saumur red Les Varennes de Mestré is the estate’s only cuvée that has not been aged in barrels. Appealing and fruit-forward, this juicy Cabernet Franc is just the sort of wine you’d love to share with friends, with a garnet color and purple highlights. The nose is fresh, with pure red-fruit aromas, mint, and subtle chocolate nuances. The palate is remarkably supple and refined, with a juicy expression of fruit.

The Saumur red Les Champs Picard is aged for twenty-four months in barrels, revealing smoky notes, dark fruit, and fine tannins. This wine expresses the elegance and depth of the Les Champs Picard terroir, offering structure and complexity for several years of cellaring.

The Saumur-Champigny Rochenard is distinguished by natural freshness and carefully managed ripeness, offering a harmonious balance of structure and vibrancy. In the glass, it captivates with its deep garnet color and elegant nose of dark fruit, accompanied by subtle hints of graphite and mint. On the palate, this Saumur-Champigny reveals a silky texture and lovely balance, with fine, integrated tannins that pleasantly extend the finish. Its aging potential will allow it to develop even greater depth and complexity in the years ahead.

The Saumur-Champigny La Salle Martin is a true favorite, ranking among the finest Saumur-Champigny wines, with an approach reminiscent of the great wines of Clos Rougeard. Aged for thirty-six months in barrels, it embodies the estate’s spirit: precision, depth, and patience. The color is quite dark red, and the nose opens with black currant, violet, and licorice. On the palate, it is dense and complex, supported by velvety tannins. Structured and rich yet underpinned by freshness, it has notes of undergrowth and sweet spice that carry through a long, distinguished finish. Decant for one hour before tasting.

Les Bulles Bleues, a sparkling Saumur rosé made by the traditional method, is produced from Cabernet Franc harvested in the Brézé terroir, on the edge of the Fontevraud forest. This fine-bubbled wine has a rosé color with subtle orange highlights and persistent, delicate bubbles. Red-fruit notes of red currant and strawberry dominate the aromatic profile. The opening on the palate is supple, with lovely volume but no heaviness. Fresh, mineral, and fruity, it is perfect as an aperitif or for special occasions.

Finally, the estate also produces Chinon cuvées from its four hectares in Indre-et-Loire. These complete the range with an expression of Cabernet Franc from terroirs renowned for their structure and aging potential, yielding full-bodied wines with silky tannins and a persistent finish.
