History of Domaine de l'Ours Bleu

The adventure of Domaine de l'Ours Bleu was born of a promise made between friends, half in jest, which gradually took shape through chance encounters and a growing passion for wine. The first plots were taken on as early as 2013, resumed in 2016, then engaged in organic conversion from 2018. True to their exacting standards, the founders chose to let their first wines age and improve before releasing them commercially from 2021 onward, all certified under organic farming.

The estate is rooted in a place steeped in history. Chaumont, an ancient manor that was the seat of a fief held by the Abbey of Seuilly founded in 1095 by Guillaume de Montsoreau, already had vines nearly a thousand years ago. Today, the wine-growing estate, set on the upper slopes of Montsoreau and complemented by an equally organic orchard, is managed by Jérôme Baillargeau, descended from a long line of winegrowers, with a single goal: to create an estate that respects the environment and produces cuvées that elevate the Loire terroir.

Terroirs and Vineyards of Domaine de l'Ours Bleu

The estate's 14 hectares extend around Montsoreau, across several renowned appellations of the Loire: Saumur (7.5 hectares) in the communes of Fontevraud and Brézé, Saumur-Champigny (2.5 hectares) in Montsoreau, and Chinon (4 hectares) in Savigny-en-Véron and Avoine. This mosaic of terroirs and microclimates lends the wines a unique typicity according to the plots. The clay-limestone soils, covered with sand, clay or gravel, rest on a base of Turonian tuffeau chalk, an ideal foundation in particular for the Chenin from the exceptional terroir of Brézé.

Two grape varieties make up the entire range: Chenin for the white wines, and Cabernet Franc for the reds, rosés and sparkling wines. Grown 100% organically, the vineyard is managed with the utmost respect for the environment and soil life. Each year, the estate tries new experiments both in the vineyard and in the cellar, with the sole ambition of creating a singular identity and the fullest expression of the Loire terroir.

Winemaking at Domaine de l'Ours Bleu

The estate's philosophy rests on the pursuit of perfectly ripe wines and long aging. Fermentations start in the traditional way in tanks, then the wines rest for a minimum of twenty-four months in various containers — tanks, barrels and amphorae — in order to gain complexity and depth before being released to market.

This precise and deliberate aging defines the house style. The Saumur Blanc Puzzle, from Brézé, thus matures for twenty-four months in barrel to yield an airy and vibrant wine, while certain red cuvées such as La Salle Martin benefit from thirty-six months of aging. The oak, always carefully integrated, adds breadth and texture without masking the fruit or the natural freshness of the wines, in a constant pursuit of balance.

The Cuvées of Domaine de l'Ours Bleu

Saumur Blanc Puzzle: the estate's flagship cuvée and source of great pride, this Chenin from the exceptional terroir of Brézé is aged for twenty-four months in barrel. Airy and vibrant, it reveals a complex nose blending peaty and toasted notes, vanilla, caramel and white fruits, on a fresh and precise palate carried by a beautifully refined acidity. A white wine built for aging, with a strong personality.

Le Petit Insolent: an original creation of the estate, this white wine is made from black Cabernet Franc grapes, in a surprising blanc de noirs style. Fresh and indulgent, with lovely notes of red fruits, it proves perfect as an aperitif and illustrates the house's spirit of innovation.

Saumur Rouge Les Varennes de Mestré: this sun-drenched and expressive Cabernet Franc captivates with its nose of blackcurrant, blackberry and a chocolatey undertone. The palate, slender, lively yet rounded, is marked by a delicate grain and finely chiseled substance, reflecting beautiful ripeness.

Saumur Rouge La Salle Martin: the estate's cellar-worthy cuvée, it benefits from a long thirty-six-month aging that gives it depth and velvety texture. Deep and silky, concentrated and refined, it will continue to improve over many years in the cellar.

Saumur-Champigny Rochenard: this Saumur-Champigny with a deep garnet color unfolds an elegant nose of dark fruits lifted by hints of graphite and mint. On the palate, the texture is silky and the balance remarkable, with fine, melted tannins that lengthen the finish and promise a fine aging potential. The estate also offers a second Saumur-Champigny cuvée.

Chinon: made from Cabernet Franc grown in Savigny-en-Véron and Avoine, this red from the banks of the Vienne expresses the full typicity of the appellation. Fresh and fruity, with cherry and red fruit flavors, it captivates with its fine tannins and drinkability.

Saumur Rosé: made from Cabernet Franc, this rosé with a limpid and brilliant salmon hue offers notes of small red fruits, citrus and peach. The attack is lively, the palate ample, and the finish rich and voluminous, for a fresh, mineral and convivial wine.

Saumur Fines Bulles: a sparkling wine made by the traditional method from Cabernet Franc, this rosé fines bulles captivates with its freshness, delicate bubbles and crunchy fruitiness. A festive and indulgent cuvée, ideal for all occasions.
