History of the Vignes de l'Ange Vin - Jean-Pierre Robinot

The story of Jean-Pierre Robinot begins at the age of 22, with a bottle of Cheval Blanc 1964 that revealed the world of wine to him in all its splendour. Born in Chahaignes, this son of the Sarthe moved to Paris and plunged frenetically into the world of wine: encounters with growers, journalists and sommeliers. By his side, a certain Michel Bettane, with whom he co-founded in 1983 the magazine Le Rouge et le Blanc, a true bible of wine in France whose reputation would become international.

But it was in the 1990s, after meeting the tutelary figures Jules Chauvet and Marcel Lapierre, that Jean-Pierre experienced his true revelation. Fortified by this philosophy of wine without artifice, he opened in the 11th arrondissement of Paris L'Ange Vin, one of the first natural wine bars in the capital, where for nearly fifteen years he initiated Parisians and visitors to the joys of living wines.

Then came the call of origins. In 2001, he returned to his home village of Chahaignes to plant his own vines and vinify in his own way. The first vintage of the estate was released in 2002, and already it caused a shockwave in the world of natural wine. Today, Jean-Pierre is joined by his daughter Juliette and his wife Noëlla in this family and artisanal venture, producing around 20,000 bottles per year under two distinct labels: L'Ange Vin, from his own vineyard, and L'Opéra des Vins, crafted from grapes purchased from trusted partner growers.

Terroirs and Vines of Jean-Pierre Robinot

Jean-Pierre Robinot's vineyard extends over around ten hectares in the heart of the Vallée du Loir, that discreet appellation stretching between Le Mans and Tours, which once counted 5,000 hectares of vines where fewer than 400 remain today. It is precisely in this obscurity that Robinot saw an opportunity: to reclaim fallow land, abandoned for over a century, in order to replant the vine with absolute respect for the soil and for living things.

The plots are planted on steep hillsides with generous exposure, on varied soils of red clay, flint, limestone and tuffeau. These geological substrates impart a sharp minerality and characteristic tension to the wines — a true signature of the place. The vineyard is managed using organic farming, with no synthetic chemical products, with horse-drawn ploughing of the soils, natural compost inputs and scrupulous respect for natural cycles.

Two grape varieties dominate the estate: Chenin Blanc, the great white variety of the Loire, capable of extraordinary complexity and longevity on these flint-limestone terroirs, and Pineau d'Aunis, the indigenous red variety of the Touraine region, with its delicate aromas of violet and white pepper. Plots of Gamay and Cabernet Franc complete the panel. Yields, deliberately limited to 25–30 hectolitres per hectare, favour concentration and the most authentic expression of the terroir.

Winemaking of Jean-Pierre Robinot

For Jean-Pierre Robinot, winemaking is as much a philosophy as a technique. It rests on a founding principle: let the wine make itself, without helping it, forcing it, or correcting it. The grapes, harvested exclusively by hand at perfect ripeness, receive no additions of any kind whatsoever. No sulphites, no exogenous yeasts, no enzymes, no sugar, no acid. Robinot's wines fall into the category of S.A.I.N.S. wines (Sans Aucun Intrant Ni Sulfites ajoutés — without any inputs or added sulphites), the most demanding standard in natural wine.

The Chenin Blanc whites are pressed very slowly, to extract the juice with maximum gentleness. They then ferment spontaneously thanks to the sole indigenous yeasts present on the grape skins, in old oak barrels, at the natural cellar temperature. Ageing lasts a minimum of 12 months on fine lees, but often far longer: Robinot does not hesitate to let his wines ferment for two, three, sometimes four years in barrel, patiently waiting for each cuvée to indicate by itself that it is ready. The wines are neither filtered nor fined.

The Pineau d'Aunis reds undergo a long whole-cluster maceration in fibreglass vats before completing their fermentation on lees in barrels for a minimum of twelve months. Here again, no intervention. The result is a wine of disconcerting lightness and finesse, with a hint of white pepper that is its characteristic signature.

The sparkling wines are produced using the ancestral method (pét-nat): fermentation begun in stainless steel tanks continues naturally in the bottle, trapping the bubbles without any additions. Each bottle is disgorged by hand. The labels, often paintings or photographs made by Jean-Pierre or his daughter Juliette, change with each vintage — an extra touch of soul for wines that are already unique.

The Cuvées of Jean-Pierre Robinot

L'Iris du Loir - Chenin Blanc (L'Ange Vin)

One of the estate's iconic cuvées, made from Chenin Blanc grown on the flint-limestone terroirs of Jasnières. After a slow fermentation in oak barrels and an extended ageing on lees, L'Iris du Loir reveals a breathtaking aromatic complexity: candied citrus, mandarin zest, white peach, soft spices and a chalky minerality that permeates an endless finish. A great ageing wine of remarkable elegance, capable of developing over several decades.

Cuvée Juliette - Chenin Blanc (L'Ange Vin)

The estate's prestige cuvée, dedicated to Jean-Pierre's daughter. Made from the oldest Chenin vines, some exceeding 100 years, aged in old barrels for several years on lees, Juliette is described by its creator himself as a "wine of extreme finesse with great energy". Complex and mineral, with around 25 grams of residual sugar that integrate perfectly with the natural acidity of the Chenin, it combines richness and tension in a rare balance. Exceptional ageing potential.

Le Charme / Charme du Loir - Chenin Blanc (L'Ange Vin)

A Chenin Blanc from vines of around 40 years old, spontaneously fermented in barrels with only indigenous yeasts, aged on lees for more than a year. Le Charme is a more immediately accessible wine than Juliette, without losing any of the Robinot identity: vibrant, taut, mineral, with notes of ripe apple, white flowers and a saline freshness that calls for a second sip. A perfect match with Loire fish, aged goat's cheeses or roast poultry.

Bistrologie - Chenin Blanc (L'Ange Vin)

In homage to the years of Parisian bistrot, Bistrologie is a Chenin Blanc fermented and aged 12 months in old barrels on indigenous yeasts. Crystalline and precise, it pulses with a sharp minerality and a driven acidity that reveals its ageing potential. A wine of character, strict and upright, for lovers of dry Chenin in an assertive style.

Le Regard du Loir / Les Vignes de le Regard - Pineau d'Aunis (L'Ange Vin)

Made from the indigenous Pineau d'Aunis grape variety, this discreet red is vinified as whole-cluster, then aged for a minimum of 12 months in barrels. Light in colour but of unsuspected aromatic depth, it develops notes of crunchy red fruits, violet, spices and white pepper — the unmistakable signature of Pineau d'Aunis. Silky tannins, fine structure. Estimated ageing potential of 12–15 years.

Fêtembulles - Chenin Blanc natural sparkling wine (L'Opéra des Vins)

Robinot's festive cuvée, a 100% Chenin Blanc natural sparkling wine (pét-nat) vinified according to the ancestral method. Fermentation begun in stainless steel tanks with indigenous yeasts is completed in the bottle, creating a fine and persistent natural effervescence. No added sulphites, unfiltered, unfined. On the nose: green apple, quince, citrus and brioche. On the palate: lively and thirst-quenching, with a chalky and mineral finish. A wine of immediate pleasure, ideal as an aperitif, with seafood or fresh cheeses.

Les Années Folles - Pineau d'Aunis sparkling rosé (L'Opéra des Vins)

A rosé natural sparkling wine crafted from Pineau d'Aunis according to the ancestral method. Light, crunchy, with delicate bubbles and a beautiful fruity freshness of small red berries and a hint of pepper. No added sulphites, no filtration, in the pure spirit of festive natural wine.

Lumière de Silex - Chenin Blanc (L'Opéra des Vins)

A cuvée from the négociant range, made from Chenin Blanc grown on flint soils, aged for 20 months in old barrels. Slightly oxidative notes, remarkable complexity, long and precise finish. A contemplative expression of Chenin with an impressive ageing potential.

Concerto di Vini - Pineau d'Aunis or Cabernet Franc (L'Opéra des Vins)

Made from grapes selected from partner growers, this red wine vinified by extended maceration (three weeks with punch-downs) is aged 12 months in old barrels and then 4 months in tank before being bottled without filtration or additions. Fruity, spiced, with raspberry and white pepper, delicate tannins and a persistent freshness. The quintessence of Aunis vinified without artifice.
