The Thomas Pico estate is also known as Domaine Pattes Loup. Thomas Pico took over the family vines in 2004 and quickly converted the 8 hectares to organic farming. The Pattes Loup estate by Thomas Pico is located in the village of Courgis (5 km southwest of Chablis), not far from the JM Brocard estate (located in Préhy). Today, the vineyard extends over approximately ten hectares and encompasses the Chablis 1ers Crus appellations (Beauregard, Butteaux, Côte de Jouan, Vaillons) and Chablis. The vines rest on the famous Kimmeridgian soil of Chablis (where sediments composed of large quantities of small fossilised oysters, ostrea virgula, were deposited).

The Chablis Beauregard 2014 cuvée is still somewhat reserved but precise, with a structured profile, flavours of lemon zest and a juicy sap (17/20 RVF). The Chablis 1er Cru Butteaux 2014 by Thomas Pico offers greater firmness and breadth. It is a vibrant wine, full of beautiful energy and fruit. The ageing is finely calibrated (17.5/20 RVF). The Chablis premier cru Côte de Jouan 2012 has a very lovely fruit and a plush palate. You feel as though you are biting into apricot flesh. The palate is full and dense, with a fine acidity and a very fine balance (16/20 B&D). The Chablis Vaillons 2014 from Pattes Loup is sourced from purchased grapes and has been produced for three years (16.5/20 RVF). These wines are best enjoyed relatively young, though they have an ageing potential of between 5 and 8 years, or even more for the finest vintages. In the Chablis village appellation, Domaine Pattes Loup offers a 2012, a wine with a chiselled palate and very pure aromas of beautifully juicy fruit. It is a moreish, mouth-watering and irresistible wine. It even offers a potential for improvement in the bottle, which is rare for a village wine (15.5 B&D). This is a wine that can be kept for 3 to 5 years. Notable vintages from Domaine Pattes Loup by Thomas Pico: 2014, 2012, 2010, 2008, 2005, 2002. This estate receives very good scores and reviews (2 stars RVF and 3 stars B&D). Furthermore, the estate built a new winery in 2014, which should help the wines to progress even further. An estate to watch!
