Jean-Yves PERON settled in Haute Savoie at Chevaline, and set to work from 2004 onwards, recovering one by one small plots of old Mondeuse vines, very well south-facing, to produce some truly beautiful wines. At first, Jean Yves Peron's vineyard was centred around Conflans (near Albertville), then it expanded through the acquisition of new plots in Feterive, further downstream in the Isère valley.

The TOP winemakers of Savoie

Jean-Yves Peron having learned the winemaking trade with Thierry Allemand in Cornas in the Rhone, then in Alsace with Bruno Schuller, he was therefore perfectly trained in the production of wines of both colors, with already 4 main grape varieties at the Peron estate: Mondeuse for red, and for whites Jacquère, Altesse, and Bergeron (which is in fact the Savoyard Roussanne). A little Gamay came to complete the plots, and Jean-Yves Perron set about replanting an old regional grape variety from the Maurienne Valley, called Persan, with delicate aromas of violet and raspberry. The vineyard extends over terraces between 300 and 600 meters altitude, on soil formed of mica schists. From 2011, a trading activity came to complete and extend the range of wines from the Jean Yves Peron estate, because the surface area of the vineyard operated was nonetheless limited (less than 4 Ha). Thus, Jean-Yves Peron buys grapes from organic winemakers he knows, in order to diversify and market a more extensive range of wines. At the estate and in the vineyard, no synthetic products are used (no pesticides, herbicides, or fertilizers), because here we prefer to use treatments derived from biodynamics, such as horsetail and nettle manure. Harvesting is entirely manual, and the grapes, both red and white, undergo carbonic maceration which allows the extraction of fresh fruit aromas. After fermentation, the musts are transferred to 500-liter barrels, for aging on lees of about 12 months, and the final blending will be done in vats for an additional 4 months. The "Le Champ Levat" cuvée is a sumptuous red Mondeuse delivering intense fresh fruit aromas, with spicy and balsamic notes. Carried by a beautiful acidity, the palate is both dense and fresh, with polished tannins and a long finish. The wine will be appreciated over 6 to 8 years. The "La Grande Journée" white cuvée is produced from the Altesse plot of the Jean Yves Peron estate, and elaborated after 3 months of skin maceration, and aging of 12 months in barrels. It is a superb macerated white wine, endowed with great structure and a certain tannic presence on the palate that could surprise the uninitiated (orange wine). The "Le Pas de l'Ours" cuvée delivers aromas of citrus and red fruits, accompanied by touches of black olives. On the palate, red fruits dominate, and aromas of undergrowth and aromatic herbs, balanced by a refreshing acidity that stretches the wine, of great length. A wine to discover, like the entire range of the Jean Yves Peron estate.
