Organic Wine

Organic wine is much more than a trend: it is a true commitment to sustainable viticulture that combines respect for nature and gustatory pleasure. Made from grapes grown according to the rigorous principles of organic farming, this wine attracts consumers seeking healthy products, often offered in a sulfite-free version for maximum purity. But what makes organic wine so special? It all begins in organic vineyards, where winemakers categorically reject chemical pesticides, synthetic herbicides and artificial fertilizers, preferring natural methods that preserve the health of soils and vines.

The emergence of organic wine is part of an ecological movement born in the 20th century, driven by thinkers critical of post-World War II agricultural industrialization. It was only from the 1980s-1990s that organic wine production became structured, responding to growing demand for ecological wines without added sulfites. Today, obtaining organic certification – such as the AB label in France (created in 1985) or the European organic label (green leaf, introduced in 2012) – requires strict compliance with standards. This includes a 3-year organic conversion period for vineyards transitioning to organic, regular inspections by organizations such as Ecocert or Bureau Veritas, and complete traceability from vine to bottle. These requirements make organic wine a guarantee of quality and environmental responsibility.

In an organic vineyard, everything is designed to harmonize man and nature. Natural fertilization relies on resources such as compost, manure or green manures (plants sown to enrich the soil with nitrogen). To protect vines from diseases such as downy mildew or powdery mildew, or pests such as aphids, winegrowers use sulfur and copper in controlled quantities, or introduce beneficial insects such as ladybugs. Biodiversity is an essential pillar: organic vineyards welcome grasses, flowers and trees to attract natural allies and maintain a balanced ecosystem. Soil work, often done manually or with mechanical tools, avoids chemical herbicides. Some producers even choose to let grass grow to prevent erosion, thereby strengthening the sustainability of their organic viticulture.

Organic winemaking completes this ecological approach. Sulfites, preservatives naturally present in wine, are limited: an organic red wine does not exceed 100 mg/L in the European Union (compared to 150 mg/L for a conventional wine), while whites and rosés are capped at 150 mg/L (compared to 200 mg/L). Some winemakers go further with cuvées without added sulfites, responding to growing demand for wines without additives. Artificial additives are drastically reduced: modified industrial yeasts or chemical clarifying agents are prohibited or strictly regulated, giving way to indigenous yeasts for spontaneous and natural fermentation. Techniques such as reverse osmosis (to concentrate the wine) or excessive chaptalization (adding sugar) are either prohibited or regulated, ensuring a wine that remains true to its terroir.

Biodynamic Wine

Biodynamic wine transcends simple wine production to become a philosophy of life, inspired by Rudolf Steiner, father of anthroposophy. Emerging in the early 20th century as a response to chemical agriculture, biodynamics seeks to produce living wines, often without sulfites, by harmonizing the vine with natural cycles and cosmic forces. More than an extension of organic wine, it aims to energize life in the biodynamic vineyard and in each bottle, offering a unique tasting experience.

Biodynamics is based on the idea that Earth, plants, animals and humans form an interconnected whole, influenced by the stars. For Steiner, modern agriculture broke this vital link. In a biodynamic vineyard, wine becomes an expression of terroir, sky and the artisanal work of the winemaker. This approach, both practical and spiritual, appeals to lovers of ecological wines seeking authenticity and depth.

Biodynamic vineyards are distinguished by unique methods. The lunar and planetary calendar governs the work: fruit days (fire signs such as Sagittarius) are dedicated to harvesting to maximize grape quality, while leaf days (water signs such as Pisces) favor vegetative growth. Biodynamic preparations are at the heart of the process: preparation 500 (cow manure fermented in a horn) stimulates microbial life in soils, preparation 501 (pulverized silica) strengthens photosynthesis, and composts based on medicinal plants (yarrow, chamomile, nettle) regulate natural balances. Preparation 508 (horsetail tea) acts as a natural fungicide against downy mildew. Applied in homeopathic doses, these practices fascinate as much as they question.

Biodiversity is omnipresent: hedges, wild grasses and animals (sheep for mowing, horses for plowing) enrich the ecosystem. The compost, "dynamized" by these preparations, replaces chemical fertilizers, while manual work preserves the soil structure, strengthening sustainable viticulture.

In the cellar, biodynamic winemaking favors simplicity: fermentation with indigenous yeasts, sulfites reduced to very low thresholds (for example, 70 mg/L for reds and 90 mg/L for whites according to the Demeter label), or even totally absent in sulfite-free cuvées. Artificial interventions such as fining or aggressive filtration are avoided, and wooden or concrete vats are preferred to stainless steel to respect the vital energy of the wine. The result? Biodynamic wines with intense and vibrant aromas, often more rustic and unique.

Natural Wine 

Natural wine, or vin nature, embodies a revolution in the wine world. Born in the 1960s-1970s under the impetus of Jules Chauvet, a visionary chemist, and popularized by winemakers such as Marcel Lapierre in Beaujolais, this movement advocates a radical approach: producing wine without added sulfites or with minimal interventions. Natural wine appeals to lovers of ecological wines tired of industrial standards, offering a raw and living expression of the grape.

Natural wine is as much a practice as an ideology. Its proponents reject "industrial viticulture" to celebrate transparency and craftsmanship. "Nothing is added, nothing is removed": this mantra guides winemakers who want to reveal the terroir and vintage, flaws included, in wines without additives. This return to sustainable viticulture attracts a growing community, from purists to pragmatists tolerating a touch of sulfites to stabilize their cuvées.

In natural vineyards, grapes generally come from organic farming or biodynamics, without pesticides or chemical products. Manual harvesting preserves the integrity of the fruits, and treatments such as nettle or horsetail teas often replace copper. Biodiversity is encouraged with wild grasses and animals, while low yields guarantee concentrated grapes. In the cellar, natural winemaking is minimalist: spontaneous fermentation with indigenous yeasts, sulfites absent or limited to 20-30 mg/L, and no additives (sugar, enzymes, clarifying agents). Unfiltered and unfined, natural wine retains its lees, which may appear cloudy or sparkling, a sign of its vitality.
