Champagne Jean Servagnat is one of the finest contemporary discoveries from the Petite Montagne de Reims. Located in Coulommes-la-Montagne, a village classified Premier Cru at the far northern edge of the Montagne de Reims, this family estate of 3.5 hectares represents several generations of Champagne winegrowers. Today led by the young Jean Servagnat, it is farmed using biodynamic agriculture, with a "bio-logical" approach resolutely focused on soil preservation, biodiversity and the natural balance of the vineyard. Planted predominantly with Pinot Meunier (the flagship grape of the Petite Montagne), complemented by Chardonnay and Pinot Noir, the individual plots give rise to single-vineyard Champagnes of great sincerity, vinified with indigenous yeasts, with intentionally very low dosages (Extra-Brut), showcasing the purity of the clay-limestone terroir and the authenticity of the Meunier.

The History of Champagne Jean Servagnat

The history of Champagne Jean Servagnat is rooted in the long winemaking tradition of the Servagnat family, who have been present in Coulommes-la-Montagne for several generations. The village, nestled to the north of the Montagne de Reims in an area nicknamed the "Petite Montagne", has always offered a privileged terroir for Pinot Meunier, perfectly suited to the cold and rainy climate of the northern part of the appellation. Over the decades, the family has patiently built up a vineyard composed of a mosaic of small plots carefully selected from the finest hillsides in the village.

The adventure takes on a new dimension when Jean Servagnat, a passionate young winegrower, takes over the family estate. Driven by a resolutely modern and committed vision, he makes biodynamic farming his hallmark, convinced that traditional cultivation methods have reached their limits and require a profound rethinking. Under his leadership, the estate evolves towards an innovative "bio-logical" approach, crafting parcellaire cuvées that reveal with rare precision the unique characteristics of Coulommes-la-Montagne, among the most authentic expressions of Meunier in Champagne.

Terroirs and Vines of Champagne Jean Servagnat

The Champagne Jean Servagnat vineyard extends over 3.5 hectares in the heart of Coulommes-la-Montagne, a Premier Cru village in the Petite Montagne de Reims. The exceptional geological characteristic of the terroir lies in more than 200 metres of chalk topped by clay-limestone soils, offering the vines an ideal water reserve and a mineral signature of great purity. The cold and humid microclimate of the northern part of the appellation, combined with these soils, makes Coulommes-la-Montagne a true land of Pinot Meunier — a grape variety particularly resistant to late frosts.

The grape variety composition reflects the identity of the village: a majority of black grapes dominated by Meunier (approximately two-thirds of the surface area), complemented by around one quarter Chardonnay and the remainder Pinot Noir. The plots, averaging 60 ares in size, are scattered across different parts of the hillside, each contributing its own specific character depending on the grape variety, soil, and exposure. Vineyard management is strictly biodynamic: no insecticides (replaced by sexual confusion to deter destructive caterpillars), no herbicides (replaced by ploughing to control grass growth), and the creation of a living ecosystem inspired by the workings of a forest, where the soil manages organic matter on its own and develops a vital humus for the vine.

Winemaking at Champagne Jean Servagnat

In the cellar, Jean Servagnat applies a respectful winemaking approach, seeking to handle the wines as little as possible so that they faithfully express the characteristics of their terroir. Harvesting is entirely manual, and the grapes are vinified plot by plot to preserve the singularity of each climat. Alcoholic fermentations are conducted in temperature-controlled stainless steel tanks (to preserve the freshness and tension of the wines) as well as in wooden barrels (to develop the aromatic complexity of the prestige cuvées), exclusively using indigenous yeasts naturally present on the grape clusters and in the cellar.

Malolactic fermentation is generally encouraged in the majority of cases, in order to round out the wines and bring them the pastry-like notes characteristic of the house style. Cold stabilisation and filtration are not systematic, depending on the characteristics sought for each cuvée and the volume produced, which may occasionally result in a slight natural sediment in certain bottles — a testament to the authenticity of the winemaking. Dosage levels are deliberately very low, almost all Extra-Brut (1 to 4 g/l), to let the terroir speak without masking, delivering Champagnes of rare purity and aromatic precision.

The Cuvées of Champagne Jean Servagnat

The Les Galipes de Coulommes Extra-Brut cuvée is the estate's iconic signature wine, whose name pays homage to the vines of Coulommes (galipe being a Champenois idiom for the vine). A perfect blend of the three Champagne grape varieties (68% Pinot Meunier, 22% Chardonnay, 10% Pinot Noir) sourced from carefully selected plots throughout the village. Vinification in stainless steel tanks with indigenous yeasts, malolactic fermentation carried out to round out the wine, very low Extra-Brut dosage (between 1.3 and 3.5 g/l depending on the year). A Champagne of fine complexity, marked by aromas of ripe fruit and brioche and toasted notes — a perfect reflection of the terroir and grape variety composition.

The Les Meuniers Insoumis cuvée is the parcellaire Blanc de Noirs cuvée crafted 100% from Pinot Meunier, sourced exclusively from the Premier Cru terroir of Coulommes-la-Montagne. The name pays tribute to this long-underestimated grape variety, which flourishes fully on these clay-limestone soils. Careful vinification and extended ageing on lees: an authentic and identity-defining Champagne, with a dense, aromatic palate marked by ripe yellow fruits, brioche notes, and a long, saline finish — the absolute signature of Meunier from the Petite Montagne.

The Vendange Solaire Millésime 2018 cuvée is an exceptional cuvée produced only in outstanding solar vintages. The 2018 edition, marked by a historic heatwave and a remarkable quality and quantity of grapes, is crafted from a blend of 44% Chardonnay, 33% Pinot Noir, and 23% Meunier. A dense, ripe palate, at once solar and taut — the expression of a great year in Coulommes.

The estate's confidential Parcellaire Cuvées complement the range with micro-editions sourced from specific plots on the Coulommes hillside, vinified separately to express the singularity of each climat. These rare cuvées, produced in very small quantities, bear witness to Jean Servagnat's artisanal approach and his ambition to reveal with precision the geological and climatic diversity of this magnificent Premier Cru village.

The Rosé from Champagne Jean Servagnat, when produced, is crafted in the same artisan philosophy, by assemblage or by saignée depending on the edition. An elegant pale pink colour, a nose of fresh red fruits (redcurrant, raspberry) enhanced by floral notes, a fine and taut palate with the mineral structure characteristic of the clay-limestone soils of Coulommes, with a deliberately minimal dosage to preserve aromatic purity.
