Founded in 2004 on the principle of deliberate independence, the estate today cultivates a small plot of Syrah using organic farming, in a deeply artisanal spirit. Structured around the appellations Crozes-Hermitage, Saint-Joseph and Cornas, complemented by the Equis range, it produces wines of character, purity and expressiveness, which have become in just a few years an essential reference in the Northern Rhône.

History of Domaine des Lises

The story of Domaine des Lises begins in 2004, when Maxime Graillot, eldest son of Alain Graillot, a legendary figure in Crozes-Hermitage, chose to forge his own path rather than wait to inherit the family domaine. This decision, true to the independent spirit of the family, led him to acquire a few parcels of young vines in Beaumont-Monteux, in the south-eastern part of the appellation. To refine his approach and find his own style, the young winemaker accumulated experiences abroad, notably in California, Burgundy and South Africa, where he absorbed other winemaking traditions.

Very quickly joined by his partner Thomas Schmittel, Maxime Graillot built a singular signature across 6 to 6.5 hectares, distinct from that of his father. Where Domaine Alain Graillot vinifies with whole clusters, Maxime chose predominantly or entirely destemmed vinification at Domaine des Lises, to reveal a more airy, floral and feminine expression of Syrah. With each passing vintage, the quality of the wines has continued to progress and the international press (Wine Anorak, Vinous, La Revue du Vin de France) now hails the domaine as one of the finest addresses in the northern Rhône Valley, a signature worthy of the Graillot name, yet bearing its own identity.

Terroirs and Vines of Domaine des Lises

The heart of Domaine des Lises lies in the southernmost part of Crozes-Hermitage, on soils of gravel and rounded pebbles from the alluvial deposits of the Rhône. The main plots are planted on the lieux-dits Les Chênes Verts and Les Picheres, planted in the 1980s, where the free-draining soils bring freshness and minerality to the Syrah. The domaine covers approximately 6.5 hectares, complemented by the management of carefully selected small plots in Saint-Joseph and Cornas, which supply the Equis range created by Maxime Graillot for his parcel-based négociant activity.

The grape varieties are deliberately simple: exclusively Syrah for the reds, complemented by a few rows of Marsanne and Roussanne on certain plots shared with the family domaine. From his takeover in 2004, Maxime Graillot converted the vineyard to organic farming, banned herbicides, reduced yields and introduced ploughing to allow roots to plunge deep into the gravels. This traditional approach, combined with the utmost care in vine management, is today extended by biodynamic thinking and total respect for living nature.

Vinifications of Domaine des Lises

In the cellar, vinifications are carried out with precision and restraint, in the pure northern Rhône tradition while incorporating lessons learned abroad. Harvesting is entirely manual, followed by rigorous sorting. Depending on the cuvée, destemming is total (as with the Crozes-Hermitage Domaine des Lises) or partial (30% to 50% whole clusters for certain Equis cuvées). The grapes are not crushed; vatting extends over 6 days to 3 weeks, in temperature-controlled concrete tanks, with gentle extractions that preserve fruit and freshness.

Fermentations are carried out solely by indigenous yeasts, without any oenological inputs. Ageing then lasts between 8 and 18 months, alternately in 40-hectolitre truncated-cone foudres and used Burgundian barrels (often sourced from Dujac, Romanée-Conti or de l'Arlot), with a proportion of new wood generally limited to 10%. This Burgundian approach to barrel ageing, combined with very low sulphur dosages, gives the wines a unique profile: purity of fruit, silky tannins, taut and fresh finishes, making them as delicious in their youth as they are suited to ageing for ten to fifteen years.

The cuvées of Domaine des Lises

Crozes-Hermitage Rouge Domaine des Lises: the domaine's signature and flagship cuvée, crafted from 100% Syrah sourced from the Beaumont-Monteux plots. Entirely destemmed, it stands out for its floral nose (violet, jasmine) and tangy red fruits, sometimes lifted by smoky notes. The palate is airy, silky and feminine, with a fresh and precise structure, melted tannins and a taut finish. A Crozes-Hermitage of great drinkability, both immediately appealing and suitable for ageing.

Crozes-Hermitage Rouge Equinoxe: a cuvée from the Equis range, crafted from Syrah sourced from the lieu-dit Les Chênes Verts, in Crozes-Hermitage. Half of the harvest is destemmed, the other half vinified as whole clusters, without crushing. Six-day vatting in concrete tanks, followed by 8 months of ageing in a 40-hectolitre truncated-cone foudre. A modern, generous Crozes-Hermitage, focused on fruit and balance, with a bright colour and airy profile, ideal for drinking in its youth.

Crozes-Hermitage Vignes Franches (Franc de Pieds): a rare and confidential cuvée, sourced from own-rooted vines (ungrafted), precious testimony to a viticultural heritage from before phylloxera. Vinified with the same care as the Domaine des Lises cuvée, it offers an even deeper and more complex signature, with an incomparable mineral structure. A rarity highly sought after by enthusiasts and collectors.

Saint-Joseph Rouge (Equis): a Saint-Joseph sourced from a particularly steep hillside plot at the heart of the appellation, which can be neither mechanised nor ploughed other than by hand. 100% Syrah vinified with a proportion of whole clusters, aged in Burgundian barrels. A structured cuvée, with taut red and black fruits, notes of crushed stone, dried flowers and spices, which reaches its full potential after one to two years of ageing.

Cornas (Equis): the most ethereal cuvée of the domaine, sourced from a small plot leased at the heart of Cornas. Vinified as whole clusters, it captivates with its nose of wild dark fruits, black pepper and liquorice, lifted by a characteristic spice linked to the stems. The palate is precise, refined, at once powerful and saline, with a fine chew and great ageing potential. A Cornas worthy of the finest signatures of the appellation, yet another gem from the Graillot family.
