Château Ausone is ideally served between 16 and 18°C to fully express the complexity of its Cabernet Franc-dominant blend. For young or age-worthy vintages (less than 15 years old), decanting for 2 to 3 hours is strongly recommended to allow the wine to open up and reveal its characteristic aromas of dark fruits, truffle, and mineral notes from the starfish limestone. For older vintages, a gentle decantation of 30 to 45 minutes will suffice, taking care not to disturb the natural sediment that forms with age.
