Château Pichon Longueville Baron, with its assertive tannic structure and aromatic richness, pairs ideally with noble red meats: a herb-crusted rack of lamb, a matured côte de bœuf or a venison fillet with ceps make for exceptional pairings. With riper, more evolved vintages, such as a 1982, a 1985 or a 2000, the wine gains in tertiary complexity and pairs beautifully with duck with truffle or feathered game. The richness of the Pauillac soil brings a minerality that also pairs very well with aged hard cheeses, at the end of a meal.
