Contrary to what their natural and accessible style might suggest, several cuvées from Domaine de Saint Pierre have real aging potential. The Savagnin aged under a veil, particularly the Cuvée du Lion, proves to be powerful and balanced, developing complex aromas close to those of a Fine Wine jaune after several years in the cellar. The ouilléd whites such as Château Renard can, for their part, evolve pleasantly over 5 to 8 years. The reds, lighter and sulfite-free, are generally intended for consumption within 3 to 5 years of harvest, in order to fully enjoy their fruitiness and freshness.
