The Vouette & Sorbée estate relies primarily on two types of Jurassic soils characteristic of the Côte des Bar: Kimmeridgian, a fossil marl rich in oysters that this territory shares with Chablis, and Portlandian, found notably on the Sorbée plot at the top of the slope. Pinot Noir dominates the vineyard, cultivated on the lieu-dits Sorbée, Biaunes and Tirmy. Chardonnay, sourced mainly from Biaunes, gives birth to the emblematic cuvée Blanc d'Argile. A very rare cuvée Textures is produced from Pinot Blanc, vinified in a Georgian amphora (qvevri) and in barrel.
