Château Simone Rouge 2007, from the limestone scree of Palette, combines elegance and complexity. Aged in barrels, this Mediterranean blend charms with blackberry and thyme notes. Rich and mineral on the palate, it reveals velvety tannins. Enjoy without delay with leg of lamb.
A family estate rooted in the hills of Palette, where winemaking traditions have been passed down for more than two centuries.
- Terroir: Limestone soils on the slopes of Meyreuil and a sheltered microclimate between pine forests and Mont Sainte-Victoire give the wines distinctive minerality and rare elegance.
- Winemaking: Traditional methods—hand harvesting, native-yeast fermentation and extended aging in oak barrels—produce cuvées of remarkable depth and complexity.
Tasting notes for Château Simone Palette Rouge 2007
- Appearance: Deep ruby-red color with dense highlights, a silky texture and velvety intensity.
- On the nose: Wild blackberry and black cherry aromas evolve into notes of garrigue, licorice and cedar, lifted by a saline hint and a touch of graphite.
- On the palate: A generous opening and noble tannins, structured yet integrated, supported by lively acidity and chalky minerality; a long, taut finish marked by elegant aromatic persistence.
Serve at room temperature in a Bordeaux-style red wine glass to reveal its full complexity.
2007 vintage

- Serving advice: Enjoy without delay. Keep under good conditions, away from light and temperature fluctuations, to allow the wine to reach its full harmony.
