Four kilometers from Aix-en-Provence, in the commune of Meyreuil, Château Simone is the iconic name of the tiny Palette appellation. Owned by the Rougier family since 1830, this domaine de 23 hectares displays a mosaic of north-facing plots on limestone scree, opposite the Sainte-Victoire mountain. Old vines sometimes more than a century old, hand harvesting, indigenous yeasts, long aging exclusively in wood in vaulted cellars carved into the rock by the Grands Carmes monks: everything here reflects an unwavering fidelity to tradition. Today, Jean-François Rougier represents the seventh generation of owners of Château Simone. The vineyard covers 25 hectares of vines growing on limestone soils. 13 hectares are planted with red grape varieties, including grenache noir, mourvèdre, syrah, cabernet sauvignon and cinsault. For whites, 12 hectares are planted with clairette, grenache blanc, bourboulenc, ugni blanc and viognier. The north-facing exposure ensures a very gradual ripening. Some plots are over a hundred years old. Harvesting is done by hand and the estate is farmed organically. The estate produces around 100,000 bottles per year. Among the wines produced, the Simone blanc cuvée, made from a blend of clairette, grenache blanc, ugni blanc and bourboulenc, displays a beautiful golden robe. The nose is floral with aromas of lime blossom and honey, and dried fruits with age. On the palate, there is a lovely freshness that reveals great subtlety and much panache as it ages. In red, the Simone cuvée, made from cinsault, grenache noir, mourvèdre and syrah, offers a powerful and structured nose with beautiful aromas of ripe fruit. The robe is a deep ruby. On the palate, notes of red fruits of great complexity can be discerned. The white wines, thanks in particular to their north-facing orientation, have a fine acidity and are capable of ageing for a very long time; they really begin to become interesting after around twenty years in the cellar. The whites are, moreover, considerably more renowned than the reds.
