History of Domaine Vaïsse

The history of Domaine Vaïsse is that of a passion born far from the schools of viticulture. Trained as a forestry technician, Pierre Vaïsse took over in 1999 the 2.5 hectares of family vines located in the area of Puéchabon, near Aniane, in the heart of the Terrasses du Larzac. Encouraged by his childhood friends, the renowned winemakers Frédéric Pourtalié (Domaine de Montcalmès) and Laurent Vaillé (La Grange des Pères), he decided to venture into winemaking. In 2007, at the age of 33, he released his first vintage with two cuvées that were immediately noticed by enthusiasts and critics alike.

A talented self-taught individual, this winemaker learned the techniques of vinification and aging in the field, surrounded by those close to him who became his partners. He built his cellar in Aniane with the help of his father, a former mason. Within a few years, Domaine Vaïsse established itself as one of the great hopes of the Languedoc, praised for the consistency of its wines and their aging potential. Today, the property extends over approximately 13 hectares of vines, part of which is vinified independently and another part entrusted to the cooperative winery, the fruit of a patient and controlled development.

Terroirs and Vines of Domaine Vaïsse

The terroir of Domaine Vaïsse unfolds across the causse terraces of the Terrasses du Larzac, an area recognized as one of the finest in the Languedoc vineyard. The vines thrive on varied soils of rounded pebbles, red clays, Urgonian limestone, and marls — a geological mosaic that lends the wines minerality, depth, and complexity. This diversity of terroir allows each grape variety to express itself fully and to bring its own personality to the final blend.

The estate's vines benefit from an ideal Mediterranean climate, marked by generous sunshine and tempered by cool winds descending from the Larzac plateau. This thermal contrast preserves the freshness of the grapes and promotes slow, harmonious ripening. The vineyard is planted with grape varieties emblematic of the Languedoc: Mourvèdre, Syrah, Carignan, and Grenache for the reds, and Viognier for the white. Mindful of preserving biodiversity, Pierre Vaïsse tends his vines according to a reasoned and environmentally respectful viticulture, minimizing inputs as much as possible to let the terroir speak.

Winemaking at Domaine Vaïsse

Winemaking at Domaine Vaïsse rests on two guiding principles: patience and meticulousness. Pierre Vaïsse favors gentle extractions and a respectful approach to the grapes, in order to preserve the fruit and the finesse of the tannins. His hallmark lies above all in the length of his aging periods, which average 24 months, sometimes longer for cuvées designed for cellaring. These extended aging periods allow the wines to refine, to gain in unctuousness, and to reveal velvety and suave textures.

This demanding approach explains why the estate's reds are at once deep, full-bodied, and of great aromatic purity, without ever falling into heaviness. The white, meanwhile, is vinified in tank to preserve the vivacity and floral expression of the Viognier. True to the spirit of the Terrasses du Larzac, Pierre Vaïsse seeks balance and freshness, a signature that brings his cuvées close to the very best of the appellation, even when they carry only an IGP de l'Hérault on the label.

The cuvées of Domaine Vaïsse

L'Aphyllante: a historic cuvée of the estate born from the very first vintage, it owes its name to a small plant with blue flowers found in the garrigue. Dominated by Mourvèdre (often the majority variety, sometimes complemented by Cinsault), it delivers an elegant and silky red wine, with aromas of blackberry, prune, black olive, and spices, underpinned by a vegetal backdrop of fennel and garrigue. Its velvety tannins and beautiful length make it a wine of both pleasure and gastronomy.

Les Capitelles: another founding cuvée of Domaine Vaïsse, a blend of Syrah and Mourvèdre (sometimes enriched with Grenache), it stands out for an intense nose of garrigue, thyme, bay leaf, black cherry, and smoked meat. The palate, ample and structured, reveals fine tannins and a perfectly integrated aging. From the 2012 vintage onwards, this cuvée was renamed Galibaou du Russe.

Galibaou du Russe: the direct heir to the Capitelles, this cuvée takes its name from an ancient tree located at the edge of a plot that once belonged to a Russian. Still built on Syrah and Mourvèdre, it seduces with its velvety, fresh, and fruity profile, its notes of ripe dark fruits, cherry, olive, and chocolate, and a spiced finish with a slightly herbaceous quality of great length. Often considered the most accomplished and most elegant cuvée of the estate.

Pur: as its name suggests, this cuvée is a single-variety expression of pure character, most often 100% Carignan sourced from old vines planted on rounded pebbles (depending on the vintage, Syrah or Mourvèdre). Classified as IGP Hérault, it stands out for its exceptional sapidity, smoky aromas, very persistent notes of tobacco and spices, and a finish that is all freshness, with rosemary. A rich, concentrated wine with a beautiful mineral length.

Hasard: the only white wine from Domaine Vaïsse, a pure Viognier sourced from high-quality plots. The nose is highly expressive, with notes of apricot, peach, elderflower, and anise. The palate, full of flesh and energy, surprises with its vivacity, freshness, and rare digestibility for this grape variety, with a persistent liquorice finish. A frank and precise white wine that pairs ideally with the most richly flavored dishes.
