The History of Domaine Vaïsse

The story of Domaine Vaïsse is one of passion born far from the classroom of a viticulture school. Trained as a forestry technician, Pierre Vaïsse took over his family’s 2.5 hectares of vines in 1999, in the Puéchabon area near Aniane, in the heart of the Terrasses du Larzac. Encouraged by his childhood friends, renowned winemakers Frédéric Pourtalié (Domaine de Montcalmès) and Laurent Vaillé (La Grange des Pères), he decided to make his own wine. In 2007, at the age of 33, he produced his first vintage, with two cuvées that immediately caught the attention of wine lovers and critics.

A talented self-taught winemaker, he learned winemaking and aging techniques firsthand, alongside friends and family who became his partners in the endeavor. He built his winery in Aniane with the help of his father, a former mason. Within a few years, Domaine Vaïsse emerged as one of the Languedoc’s most promising producers, praised for the consistency and aging potential of its wines. Today, the property covers approximately 13 hectares of vines, with some grapes vinified at the estate and the rest entrusted to the cooperative winery—the result of patient, carefully managed growth.

The Terroirs and Vines of Domaine Vaïsse

The terroir of Domaine Vaïsse extends across the limestone-plateau terraces of the Terrasses du Larzac, an area recognized as one of the finest in the Languedoc wine region. The vines thrive in varied soils of rounded pebbles, red clay, Urgonian limestone, and marl—a geological mosaic that lends the wines minerality, depth, and complexity. This diversity of terroirs allows each grape variety to express itself fully and contribute its own character to the final blend.

The estate’s vines enjoy an ideal Mediterranean climate, with abundant sunshine tempered by cool winds descending from the Larzac plateau. This temperature contrast preserves the grapes’ freshness and encourages slow, even ripening. The vineyard is planted with emblematic Languedoc varieties: Mourvèdre, Syrah, Carignan, and Grenache for the reds, and Viognier for the white. Committed to preserving biodiversity, Pierre Vaïsse tends his vines using a measured, environmentally respectful approach, limiting inputs as much as possible to let the terroir speak for itself.

Winemaking at Domaine Vaïsse

Winemaking at Domaine Vaïsse is guided by two principles: patience and meticulous care. Pierre Vaïsse favors gentle extraction and careful handling of the grapes to preserve the fruit and the finesse of the tannins. His hallmark is above all the length of aging, which averages 24 months and sometimes longer for cuvées made to age. This extended aging allows the wines to gain refinement and richness, revealing velvety, supple textures.

This exacting approach explains why the estate’s reds are deep and fleshy yet remarkably pure in aroma, without ever feeling heavy. The white, meanwhile, is vinified in tanks to preserve the Viognier’s liveliness and floral expression. True to the spirit of the Terrasses du Larzac, Pierre Vaïsse seeks balance and freshness—a hallmark that places his cuvées alongside the best of the appellation, even when their labels carry only an IGP Hérault designation.

The Cuvées of Domaine Vaïsse

L’Aphyllante: a historic estate cuvée dating back to its first vintage, named after a small blue-flowered plant found in the garrigue. Predominantly Mourvèdre, sometimes complemented by Cinsault, it is an elegant, silky red with aromas of blackberry, prune, black olive, and spice, underpinned by herbal notes of fennel and garrigue. Its velvety tannins and lovely length make it a pleasure to drink and a fine partner for food.

Les Capitelles: another founding cuvée of Domaine Vaïsse, this blend of Syrah and Mourvèdre (sometimes with added Grenache) stands out for its intense aromas of garrigue, thyme, bay leaf, black cherry, and smoked meat. Full-bodied and structured on the palate, it reveals fine tannins and beautifully integrated oak aging. From the 2012 vintage onward, this cuvée was renamed Galibaou du Russe.

Galibaou du Russe: the direct successor to Les Capitelles, this cuvée takes its name from an old tree at the edge of a plot once owned by a Russian. Still based on Syrah and Mourvèdre, it charms with its velvety, fresh, fruit-forward character, notes of ripe dark fruit, cherry, olive, and chocolate, and a long, lightly herbal, spicy finish. It is often considered the estate’s most accomplished and elegant cuvée.

Pur: as its name suggests, this cuvée is a pure expression of a single grape variety, most often 100% Carignan from old vines planted on rounded pebbles (or Syrah or Mourvèdre, depending on the vintage). Classified as IGP Hérault, it stands out for its exceptional savory character, smoky aromas, persistent notes of tobacco and spice, and a fresh, rosemary-scented finish. A rich, concentrated wine with impressive mineral length.

Hasard: the only white wine from Domaine Vaïsse, a pure Viognier from exceptional vineyard plots. The nose is highly expressive, with notes of apricot, peach, elderflower, and anise. Fleshy and energetic on the palate, it surprises with its liveliness, freshness, and unusual drinkability for this grape variety, finishing with a lingering note of licorice. A direct, precise white that pairs beautifully with boldly seasoned dishes.
