History of Domaine Avéla

The history of Domaine Avéla is one of an absolute passion for wine and terroir. In 2002, Franck Avéla, a vigneron-éleveur driven by a genuine dream of oenology, founded his estate in the heart of the Languedoc. Rather than pursuing volume, he made the radical choice of rarity and excellence, selecting the finest plots and the most authentic grape varieties of the region. The first vintage, released in 2002, was initially claimed under the Saint-Chinian appellation, before the winemaker decided to free himself from the appellation's constraints and classify his production as Vin de France.

With a deliberately limited production of a few thousand bottles per year, Domaine Avéla has become one of the best-kept secrets of the Languedoc vineyard. What matters above all to Franck Avéla is the wine and its philosophy, founded on respect for the terroir, traditional cultivation and the preservation of the aromas of the garrigue. The winemaker's discretion and the rarity of his bottles, sought after by enthusiasts and adopted by numerous gastronomic tables, have forged the almost mythical reputation of this very small estate in the South of France.

Terroirs and Vines of Domaine Avéla

The terroir of Domaine Avéla spans only 4 hectares, making it one of the smallest vineyards in the Languedoc. Situated on the heights of Creissan and Quarante, in the heart of the garrigue and at the gateway to the Parc Naturel Régional du Haut Languedoc, the vines benefit from an ideal exposure and an exceptional aromatic environment. The clay-limestone soils provide structure, freshness and depth to the wines, while the Mediterranean climate and the scents of the garrigue imprint their signature on every cuvée.

The strength of the estate lies in its heritage of old vines, some over a century old, with a first planting of carignan dating back to 1911. To this emblematic variety are added old cinsault, grenache and syrah, carefully selected for their authenticity. Aware of environmental issues and committed to preserving biodiversity, Franck Avéla manages his entire vineyard according to the strict practices of organic farming. Each plot receives particular care, tailored to its needs, so as to allow its personality to express itself fully, with minuscule yields of around 15 hectolitres per hectare that concentrate all the richness of the berries.

Winemaking at Domaine Avéla

Winemaking at Domaine Avéla follows one of the most demanding specifications in the region, designed to reveal the purity of the fruit and the terroir. The harvests are entirely manual, followed by a rigorous double sorting, first in the vineyard and then in the cellar. Each grape variety (carignan, cinsault, syrah and grenache) is vinified separately, crushed and then vatted for a skin maceration punctuated by regular pigeages. Fermentations are carried out solely with indigenous yeasts naturally present on the berries, in a minimally interventionist approach faithful to the winemaker's spirit.

Pressing is carried out in a vertical press, followed by a long ageing of two years on lees in oak barrels. Sulphur is added in minimal quantities and the wine is bottled without filtration, so as to preserve intact the aromas, the substance and the energy of the grapes. This artisanal and patient approach, in which nature expresses itself freely, gives rise to a wine of great complexity, at once dense, fresh and velvety, built for ageing and capable of seducing the most discerning palates.

The Cuvées of Domaine Avéla

Théodore: the unique and emblematic cuvée of Domaine Avéla, this fine wine red from the Languedoc embodies in itself the entire philosophy of Franck Avéla. It is made from a blend of grape varieties sourced from old vines, dominated by centenarian carignan planted in 1911, complemented by old cinsault, grenache and syrah. Produced in very limited quantities, classified as Vin de France to free itself from appellation constraints, Théodore is aged for two years on lees in oak barrels before being bottled without filtration.

Behind its deep ruby robe, Théodore reveals an enchanting bouquet of dark fruits, cherry, fresh leather and spices, underscored by smoky and toasted notes, sometimes enhanced by truffle, prune and raisin on more evolved vintages. The palate, dense and concentrated, unfolds a fresh and velvety texture wrapped in silky tannins, of remarkable balance, with no dominant oakiness despite the long ageing under wood. The long and unctuous finish marks a rare and exceptional wine, adopted by the finest Michelin-starred tables. Théodore is best enjoyed with grilled red meats, a marbled rib of beef, lamb with thyme and rosemary or a gardiane de taureau, served between 16 and 18 degrees after one hour of aeration or decanting.
