For over 15 years, Gilles Jayer of Domaine Jayer Gilles has cultivated 11 hectares in the Côte d'Or in Burgundy, divided equally between white Burgundy wines and red Burgundy wines. He passed away in 2018. The white wines of Domaine Gilles Jayer are blends of chardonnay and pinot blanc. They are aged 70% in new barrels and 30% in vats. They are not fined but undergo a light filtration before bottling. The reds of Domaine Jayer Gilles are aged 100% in new barrels. They are neither fined nor filtered. The domaine is best known for its Échézeaux. Enthusiasts are well aware of this and also stock up on its Hautes Côtes de Nuits, its Côtes de Nuits Villages and Nuits Saint Georges Hauts Poirets and Hauts Pruliers, as well as the Nuits Saint Georges 1er Cru Les Damodes.
