Bertrand Minchin cultivates his vines across two estates within the Minchin domaines: the Domaine La Tour Saint Martin, established in 1988 and located in Morogues in the AOP Ménetou-Salon, and the Claux Delorme since 2004 in the AOC Touraine. The Domaine La Tour Saint Martin comprises 10 hectares of vines planted with Sauvignon Blanc and 7 hectares with Pinot Noir.

The vineyards are managed with sustainable farming practices and the estate holds the High Environmental Value (HEV) certification. The majority of the vineyard is harvested by hand. The wines produced are concentrated reds and mineral, crystalline whites. The Minchin La Tour Saint Martin Menetou Salon Morogues cuvée, made from sauvignon blanc, offers a golden robe with green-gold highlights. The nose is complex with citrus aromas. The palate is fresh with mentholated notes and displays beautiful minerality. In red, the Minchin La Tour Saint Martin Menetou Salon Pommerais cuvée, made exclusively from pinot noir, has a beautiful cherry-colored robe. The nose is expressive and harmonious with aromas of red fruits, rosemary and brown tobacco. On the palate, notes of red fruits and spices can be found. Le Claux Delorme produces approximately 60% red wines planted with gamay and pinot noir grape varieties and 40% whites with sauvignon and chardonnay grape varieties. The Minchin Valençay Le Claux Delorme cuvée, with its purple-colored robe, features aromas of violet and red fruits on the nose. The palate is of beautiful finesse.
