The Saint-Péray appellation, nestled in Ardèche in the northern Rhône Valley, has been a prestigious AOC since 1936, dedicated to still and sparkling white wines. Spanning approximately 115 hectares (2023) in the communes of Saint-Péray and Toulaud, it rests on limestone, clay-limestone and granitic soils. The Marsanne and Roussanne grape varieties produce wines with floral aromas (acacia, violet) and fruity notes (apricot, dried fruits), with a unique finesse. Yield is limited to 45 hl/ha for still wines and 52 hl/ha for sparkling wines, with a minimum alcohol content of 10.5% for the former and 9% for the latter. Approximately 6% of production is sparkling, made according to the traditional method, a legacy initiated in 1829 by Louis-Alexandre Faure.
