Château Dassault is a Grand Cru Classé of Saint-Émilion, on the right bank of the Bordeaux wine region, owned by the Dassault family since 1955. Located on the northern slope of the appellation, this prestigious estate produces precise and full-bodied red wines, renowned for their elegance, vibrant fruitiness and polished tannins. Dominated by Merlot, its cuvées express the richness of the clay-limestone and sandy soils of Saint-Émilion.
The history of the estate dates back to 1862, when Victor Beylot created Château Couperie by bringing together three tenant farms in Saint-Émilion. The property changed hands several times until 1955, when aviation industrialist Marcel Dassault purchased it on impulse, captivated by the château and its grounds planted with century-old trees and magnolias. He immediately renamed the estate after himself, replanted the vineyard and modernised the facilities, with a clear ambition: to elevate the property to the ranks of the greatest.
This quest for excellence was rewarded in 1969, when Château Dassault attained the title of Saint-Émilion Grand Cru Classé, a distinction it has retained ever since. The second wine, D de Dassault, came into being in the 1990s. Under the impetus of Laurent Dassault, Marcel's grandson, the estate expanded with Château La Fleur in 2002 and then Château Faurie de Souchard, whose vineyard was integrated into production in 2022, bringing the total area to around forty hectares. United within Dassault Wine Estates, these properties today form one of the largest wine estates in Saint-Émilion.
Château Dassault is situated on the northern slopes of the Saint-Émilion appellation, at the foot of the hillside. This exposure provides it with a precious natural freshness, favourable to the proper progression of the vine's cycle and to adaptation to climate change. The estate draws its character from a mosaic of emblematic terroirs: argilo-calcareous hillside, clay over a limestone substratum, sandy-clay and clay-sandy soils, as well as ancient sands marked by iron-rich hardpan.
The grape blend, representative of the appellation, combines 66% merlot, 26% cabernet franc and 8% cabernet sauvignon. Since 2015, a ten-year restructuring plan, supported by detailed soil mapping, has made it possible to increase the proportion of the later-ripening cabernets without altering the identity of the wine. Long committed to agroecology (grass cover between rows, cover crops, green manures), the estate holds Haute Valeur Environnementale level 3 certification and the Bee Friendly label.
The harvest is collected by hand, then vinified plot by plot. In 2022, the estate was equipped with a 3,500 square metre gravity-fed winery on three levels, where vatting is carried out by gravity in temperature-controlled stainless steel tanks of varying capacities. This precision tool allows the expression of each terroir and each grape variety to be respected as closely as possible.
The ageing takes place in an underground cellar offering ideal humidity, where barrels, large oak casks and amphorae are selected for their ability to preserve the fruit. The Fine Wine spends twelve to sixteen months in these various vessels, with a restrained use of oak that supports the wine without ever dominating it. True to the philosophy of the Dassault family, the objective remains to produce clean, elegant wines built for ageing.
Château Dassault (Saint-Émilion Grand Cru Classé, red) is the estate's fine wine, dominated by merlot complemented by cabernet franc and sauvignon. It displays a deep and brilliant colour and a nose of ripe dark fruits (blackcurrant, blackberry, cherry) enhanced by soft spices and finely integrated oak. The palate, ample and dense, retains a beautiful freshness, supported by tight yet well-rounded tannins. A true wine for ageing, it blossoms after ten to fifteen years, developing notes of truffle, undergrowth, blonde tobacco and leather, and pairs ideally with red meats, lamb and game.
D de Dassault (Saint-Émilion Grand Cru, red) is the estate's second wine, born in the 1990s and formerly known as Château Mérissac. Crafted from the youngest vines, planted on ancient sands, it gives pride of place to merlot. Vinified in small stainless steel tanks then aged for twelve to eighteen months, partly in second-use barrels and partly in tanks, it charms with its freshness, its generous fruitiness and its roundness. Approachable from its earliest years, it offers an immediate and seductive introduction to the Dassault style.
