Founded in 2021 by Pascal Théreau, Domaine de La Patelle is the fruit of a passionate career change and a deep respect for the Jura heritage. A former cooper, Pascal spent years crafting French oak barrels before turning to viticulture. In 2018, he began oenology training in Beaune while working alongside Stéphane Tissot, an emblematic figure of the Jura. This experience profoundly marked his approach, focused on authenticity and quality. In 2021, he acquired his first vines in Arbois, including a Chardonnay parcel that would give birth to his inaugural cuvée, "Coup de Feu". The following year, he took over the vines of Domaine des Bodines, a site cultivated biodynamically for over fifteen years. The name "La Patelle" pays tribute to a ruined kiosk, restored by Pascal in the image of an old postcard, symbol of his attachment to the terroir and local history.
Domaine de La Patelle extends over 6 hectares in the Arbois region, an exceptional terroir of the Jura. The vines, cultivated using organic agriculture, thrive on varied soils: limestone and marly for Chardonnay and Savagnin, clay-limestone for Trousseau, Pinot Noir and Poulsard. These terroirs give the wines a unique complexity, marked by distinctive minerality and vibrant freshness. Among the emblematic parcels, Les Tourillons stands out for its limestone soils, ideal for whites, while Les Bodines, with its red marls and clays, offers perfect conditions for red grape varieties. This diversity of soils allows the estate to produce wines that fully express their place of origin, a precious asset for enthusiasts seeking authentic cuvées.
At Domaine de La Patelle, winemaking is guided by a minimalist philosophy that respects nature. Pascal Théreau favors spontaneous fermentations with indigenous yeasts, without clarification or filtration, and limits the use of sulfites to preserve the purity of aromas. The wines are vinified and aged in a variety of containers – oak barrels, stainless steel tanks, foudres, Diamant tanks and amphorae – in order to reveal the singularity of each grape variety and terroir. This artisanal approach, inherited from his mentor Stéphane Tissot, produces precise, balanced wines that are faithful to their origin. Each cuvée is designed to reflect the soul of the Jura, with particular attention paid to texture, freshness and complexity.

Le Kiosque (Chardonnay)
This white wine, from vines planted on the limestone soils of Les Tourillons, is a model of purity and precision. Aged in barrels, foudres, Diamant tanks and amphorae, it reveals aromas of fresh lemon zest, chalky minerality and a slight reduction that adds a touch of complexity. Its silky texture and crystalline acidity make it an ideal wine to accompany seafood or refined dishes. Capable of evolving over 5 to 10 years, it is perfect for lovers of elegant Jura whites.
Bout d'Vin (Trousseau)
Made from 40-year-old vines grown on the red marls of Les Bodines, this Trousseau is vinified in stainless steel tanks after a 2.5-week maceration. It offers a beautiful density of red fruits, sharp minerality and a silky texture. Its subtle tannins and lively acidity give it remarkable balance, with aging potential of 5 years. An ideal red wine to accompany charcuterie or grilled meats.
Poids Plume (Poulsard)
This Poulsard, whose name evokes its lightness, is vinified with 50% whole clusters on clay-marl soils. Without added sulfites, it seduces with its vivacity, notes of fresh red fruits and a touch of earthy funk. Served slightly chilled, it is perfect for an aperitif or light dishes. Its vibrant personality makes it a must for natural wine enthusiasts.
Devers (Pinot Noir)
From the steep slopes of Les Bodines, this Pinot Noir is vinified in stainless steel tanks after a three-week maceration. It reveals aromas of cherry and blueberry, supported by fine tannins and juicy acidity. Classified as Vin de France for the 2022 vintage, it will join the Arbois appellation in the future. This structured and elegant wine is ready to drink, but will gain complexity with aging for a few years.
Coup de Feu (Chardonnay)
The estate's first cuvée, this Chardonnay from a micro-parcel in Arbois is a rare and sought-after wine. Carefully vinified, it offers a pure expression of the grape variety, with floral notes, lively acidity and a mineral finish. Available in limited quantities, it embodies Pascal Théreau's promising talent.
