Champagne Bonnet-Ponson, based in Chamery in the Montagne de Reims for five generations, embodies a family viticulture rooted in respect, certified organic since 2013. The Premier Cru Seconde Nature cuvée stands out with its complete lack of dosage (0 g/l), unveiling the raw, authentic expression of its chalky terroir. This unique blend combines 50% Pinot Meunier, 30% Pinot Noir, and 20% Chardonnay, fermented in stainless steel tanks and oak barrels, with 40% reserve wines adding depth.
On tasting, this champagne displays a luminous pale yellow hue and lively bubbles. The nose reveals fresh aromas of green apple, lemon, and white flowers, accented by chalky mineral notes. On the palate, it delivers a crisp attack, a taut texture, and a lingering saline finish reminiscent of wet stone.
