A family estate rooted in Essoyes, where biodynamics reveals the mineral soul of the Côte des Bar.
- Terroir: Kimmeridgian clay-limestone soils, between Champagne and Burgundy, shaping wines of unique tension.
- Vinification: Indigenous yeasts, aging in oak barrels with no added sulfur for a pure expression of the grape variety.
Tasting notes for Ruppert Leroy Fosse Grely Brut Nature R22
Appearance – Golden robe with green highlights, threaded by a fine and silky effervescence, like a veil of chalk suspended in the air.
On the nose – Aromas of crunchy green apple, candied lemon, and hawthorn blossom, lifted by a saline touch and a chalky minerality that evokes the subsoils of the Côte des Bar.
On the palate – Lively and precise attack, carried by a taut acidity and an elegant texture; the minerality stretches into a long, saline finish of crystalline purity.
Serve at 8–10°C in a tall flute to preserve the freshness and fineness of the bubbles.
