Organic Champagnes at the heart of the Montagne de Reims
Located at the heart of the Montagne de Reims, Champagne Bonnet-Ponson embodies more than 150 years of family expertise, passion for the vine, and nature-conscious innovation. Certified organic since 2016, this family estate perpetuates a philosophy centered on authenticity, sustainability, and the pure expression of Champagne terroirs.
The history of Champagne Bonnet-Ponson begins in 1862 in Chamery, when Grégoire Bonnet became one of the first grower-producers in the region. Driven by a desire for independence, he decided to produce his own wine from the grapes grown on his land. This initiative marked the beginning of a family adventure that has spanned generations.
His son Jules Bonnet continued his father's work by expanding the vineyard and installing a 5,500 kg press in 1902, an innovation at the time. After the destruction of the Second World War, Raoul Bonnet, Grégoire's grandson, built a new cellar to revive production. The arrival of André Bonnet, supported by his draft horses, brought a touch of modernity, notably with the introduction of new winemaking techniques.
In 1957, the marriage of André Bonnet and Monique Ponson marked a key milestone in the history of the estate. Together, they founded Champagne Bonnet-Ponson, expanding the vineyard with plots inherited from the Ponson family. Today, under the leadership of Cyril Bonnet, representing the sixth generation, the estate embodies a perfect balance between tradition and innovation. Its organic conversion, begun in 2013, reflects its commitment to sustainable and environmentally responsible viticulture.
The Champagne Bonnet-Ponson vineyard covers 10.5 hectares, spread across more than 50 plots located in four emblematic villages of the Montagne de Reims: Chamery, Vrigny, Coulommes-la-Montagne (classified Premier Cru) and Verzenay (Grand Cru).
Varied soils and exposures:
At the foot of the slopes, sandy and light soils favor Pinot Meunier, yielding fruity and indulgent wines.
The mid-slopes, rich in silt and clay, are home to Pinot Noir, offering structured and deep wines.
The heights, dominated by clay soils mixed with limestone scree, are ideal for Chardonnay, producing vibrant and elegant wines.
Since 2013, all the plots have been cultivated without insecticides or herbicides, and the estate uses natural fungicides such as copper and sulfur, supplemented by preparations based on local plants. This approach helps preserve the vitality of the soils and vines while minimizing environmental impact.
The vineyard is planted with 3.80 ha of Pinot Noir, 3.30 ha of Meunier, 3.20 ha of Chardonnay and 0.20 ha of Petit Meslier, an ancient variety recently reintroduced.
Winemaking at Champagne Bonnet-Ponson is based on gentle, respectful methods to reveal the purest expression of the terroirs.
Each plot is pressed separately to preserve the typicity of its grapes. The musts are then transferred by gravity into settling tanks.
The estate uses a house-made levain produced from the vineyard's own grapes, thereby limiting the use of exogenous yeasts and sulfites. Some of the wines are even vinified without sulfites, marking a return to natural practices.
The wines age in contact with their lees in oak barrels, stainless steel tanks, or concrete amphoras, enhancing their aromatic complexity and aging potential.
Each year, 30 to 40% of the harvest is set aside in reserve to guarantee the consistency of the house style. After blending, the Champagnes rest in the cellar for between 3 and 10 years to reach their optimal maturity.
Extra Brut - Cuvée Perpétuelle:
A blend of 40% Pinot Noir, 30% Chardonnay and 30% Meunier, this generous cuvée offers aromas of white fruits, candied citrus and hazelnut.
Extra Brut Rosé - Cuvée Perpétuelle:
A balance of red fruits and spices, thanks to 50% Pinot Noir, 25% Chardonnay and 25% Meunier. A touch of red wine from Chamery enhances its character.
Non Dosé - Cuvée Perpétuelle:
With a complex and gastronomic palate, this blend (40% Pinot Noir, 30% Chardonnay, 30% Meunier) reflects an uncompromising purity.
Seconde Nature:
Vinified without sulfites, this cuvée combines 45% Pinot Noir, 40% Chardonnay and 15% Meunier, expressing a unique authenticity.
Seconde Nature Maceration Rosé:
100% Pinot Noir, this rosé reveals a remarkable depth and structure, sourced from Premier Cru plots.
Le Jour:
A tribute to Meunier, sourced from the "Le Jour" plot in Vrigny, this champagne reveals mineral notes and exceptional vivacity.
