This Bourgogne Blanc 2023 from Domaine Fanny Sabre, born from Chardonnay on clay-limestone soils, combines ripe apple, lemon and flint. Aged in barrels, it captivates with its freshness, silkiness and mineral finish. Perfect with fish or cheeses, to enjoy now or to keep for 3–5 years.
A family estate rooted in the Côte de Beaune, where respect for the terroir has guided every gesture for generations.
- Terroir : Clay-limestone soils, typical of Burgundy, which bring that chalky minerality and characteristic tension to the wines – a dialogue between rock and fruit.
- Vines : Chardonnay plots aged 40 to 50 years, well-exposed between Meursault, Beaune and Pommard, offering natural concentration and aromatic depth.
- Vinification : Meticulous work – manual sorting, gentle pressing and barrel ageing, with a touch of new oak to support without dominating, preserving the purity of the grape variety.
- Philosophy : A biodynamic approach, where human intervention is kept discreet to allow the truth of the vintage and the place to express itself.
- To the eye : A pale golden colour, with a silky clarity, where light dances with understated elegance.
- On the nose : First notes of ripe yellow apple and fresh lemon zest, followed by delicate white fruits, a saline touch and that wet stone minerality evoking the limestone subsoils of the Côte.
- On the palate : A texture that is both rich and taut, carried by a lively and precise acidity, where the chalky minerality stretches into a long, saline finish, leaving an impression of purity and harmonious tension.
To be served between 10 and 12°C, in a Burgundy-style white wine glass to reveal its full complexity.
A vintage marked by a rare balance, where freshness and maturity respond to each other with precision.
- Climate conditions : A temperate summer, punctuated by cool nights, preserved the natural acidity of the grapes while allowing slow and complete ripening, a guarantee of aromatic complexity.
- Ageing potential : To be kept for 5 to 8 years under optimal conditions (stable temperature, away from light), to allow its mineral and fruity nuances to fully develop.
