History of Domaine Fanny Sabre  

The history of Domaine Fanny Sabre begins in the 1980s, when the Sabre family established what would become a promising estate in Pommard. Yet it is in 2005 that the story takes a decisive turn. At just 25 years old, Fanny Sabre takes over the reins of the estate following the death of her father. Although her path initially seemed oriented towards a career in law, her passion for the vine and wine quickly asserts itself as an obvious calling.

From the very beginning, Fanny benefits from the guidance of Philippe Pacalet, a leading figure in the world of natural wines in Burgundy. For three years, she learns at his side the subtleties of environmentally respectful viticulture and additive-free winemaking. This mentorship profoundly shapes her working philosophy, which is founded on the enhancement of terroir, the preservation of ecosystems and the pursuit of purity in every cuvée.

Under her leadership, the estate evolves rapidly. Fanny decides to convert the entire property to biodynamics, adopting innovative agricultural and winemaking practices while respecting Burgundian traditions. Today, she embodies a new generation of winemakers, combining ancestral expertise with a contemporary vision.

Terroirs and Vines of Domaine Fanny Sabre  

Domaine Fanny Sabre spans 4.5 hectares, spread across some of the most prestigious appellations of the Côte de Beaune. These terroirs, located in Beaune, Savigny-lès-Beaune, Meursault, Volnay and Pommard, are renowned for their diversity and richness, allowing each cuvée to fully reflect its origin.

These living soils are carefully maintained through environmentally respectful practices.

Fanny pays meticulous attention to every stage of vine cultivation. The soils are lightly tilled to promote their aeration and vitality, while natural ground cover helps enrich biodiversity and prevent erosion. No chemical products are used; treatments rely solely on organic blends that respect the ecosystem. Through green harvesting and rigorous bud removal, Fanny optimises grape quality by limiting quantity. Each bunch is harvested by hand, ensuring healthy, ripe fruit for precise and natural winemaking.  

These constant efforts allow the full richness and singularity of the terroirs to be expressed in every bottle.

Winemaking at Domaine Fanny Sabre  

In the cellar, Fanny Sabre's work is distinguished by a artisanal and natural approach, where every gesture aims to respect the raw material and reveal the identity of the terroir.

Winemaking at Domaine Fanny Sabre is based on three key principles:  

Indigenous yeasts: All fermentations are spontaneous, carried out using yeasts naturally present on the grapes and in the cellar.  

Minimisation of additives: The addition of sulphites is reduced to a strict minimum, only when necessary to stabilise the wine.  

Limited intervention: The processes are guided by a non-interventionist approach, allowing the wine to evolve naturally.  

Red wines 

Fanny uses semi-carbonic maceration, a method that preserves fruity aromas and freshness while lending finesse to the tannins. Fermentations take place directly in oak barrels, allowing the wine to gain in complexity.  

White wines

The grapes are gently pressed before being transferred onto fine lees. Lees stirring is carried out sparingly, favouring the tension and minerality of the wines.  

Ageing takes place primarily in used barrels to avoid an excessive oaky character. The wines benefit from extended lees contact, which strengthens their structure and aromatic depth.  

Each wine is bottled by hand, without aggressive filtration, thereby preserving its integrity and natural character.  

This approach, halfway between tradition and innovation, gives rise to wines that are elegant, precise and deeply rooted in their terroir.

The cuvées of Domaine Fanny Sabre  

The range of Domaine Fanny Sabre reflects the diversity of its terroirs and the creativity of the winemaker. Each cuvée, produced in small quantities, is the result of meticulous work and a pursuit of purity.

Aligoté: A lively and refreshing wine, ideal for discovering the world of natural wines.  

Meursault Sous la Velle: A refined Chardonnay, with notes of white fruits and a beautiful mineral tension.  

Meursault 1er Cru Charmes: A prestigious, rich and complex cuvée, perfect for great occasions.  

L'Oranger de Pierre: A macerated Chardonnay aged in amphora, with captivating aromas of apricot and dried flowers.  

Beaune 1er Cru: A structured Pinot Noir, with aromas of red fruits and spices.  

Pommard: An emblematic cuvée, combining power and elegance, with silky tannins and a persistent finish.  

Volnay: A wine of great delicacy, marked by floral aromas and a velvety texture.  

L'Oranger de Pierre: A macerated Chardonnay aged in amphora, with captivating aromas of apricot and dried flowers.
