Does the Pascal Cotat estate practise organic viticulture?
Pascal Cotat estate is not certified organic, but cultivates its vines according to principles close to organic farming: no pesticides are used on the vines, only indigenous yeasts are used during fermentation, and the lunar calendar guides racking operations. Rigorous soil work and particularly meticulous pruning yield grapes of exceptional quality. A philosophy aimed above all at faithfully revealing the character of the Chavignol terroir.
