What makes the wines of the Pascal Cotat estate so rare and sought-after?
Domaine Pascal Cotat covers just 2.3 hectares, situated on the steep slopes of Chavignol, making it one of the smallest producers in the Sancerre appellation. Harvesting is done by hand using a winch-cart system adapted to the steepest gradients, and the wines are aged in demi-muids, without fining or filtration, guaranteeing wines of remarkable purity and authenticity.
