The Pinot Gris Zellberg 2021 from Domaine Ostertag draws its minerality from the clay-limestone soils of Nothalten. This dry white wine, aged in barrels, marries pear and spices with a saline touch. Silky texture and lively freshness on the palate. To be savoured until 2030, with foie gras or scallops.

- Terroir: Clay-limestone and pink sandstone soils of Zellberg, in the Alsace appellation, where geological complexity shapes wines of vibrant minerality.
- Winemaking: Biodynamic methods and ageing in Vosges oak barrels, for precise, lively cuvées faithful to their origin.
To the eye – A golden robe with pale reflections, of a silky and luminous texture, like a ray of sunlight captured in the glass.
On the nose – First notes of Williams pear and acacia blossom, then deeper touches of summer honey and candied ginger, lifted by a subtle chalky salinity.
On the palate – A dense and velvety texture, carried by taut acidity and a saline minerality that extends the finish into a long and elegant persistence.
To be served between 10 and 12°C, in a Burgundy-style white wine glass to reveal its full complexity.
