The Pascal Cotat Sancerre La Grande Côte 2024, from the Kimmeridgian hillsides of Chavignol, combines exotic fruits and chalky minerality. Aged in demi-muids, this lively and taut Sauvignon Blanc pairs beautifully with oysters and goat's cheese, ideal for cellaring 5 to 10 years.
A family heritage rooted in Chavignol, where Sancerre expresses itself with rare minerality and timeless elegance.
- Terroir: Steep slopes of La Grande Côte, Kimmeridgian clay-limestone soils, south-facing exposure – a perfect setting for Sauvignon Blanc.
- Winemaking: Indigenous yeasts, ageing in old demi-muids, without fining or filtration – absolute respect for the purity of the fruit and the terroir.
