Domaine Stéphane Cyran is a young, under-the-radar estate in the wine-growing region of Lorraine, located in Mont-le-Vignoble, at the heart of the Côtes de Toul appellation, about twenty kilometres west of Nancy. History of Domaine Stéphane Cyran

Originally from Moselle, a few kilometres from the German border and from a family of miners, Stéphane Cyran long nurtured a passion for gastronomy and wine before making it his profession. A former tourism professional, he made an inspired career change by completing a BTS in viticulture and oenology in Rouffach, in Alsace, where he trained notably as an apprentice under Sylvie Spielmann and crossed paths with natural winemakers such as Valentin Morel and Vincent Marie. In 2016, he returned to his home region and settled in Mont-le-Vignoble, in the Toulois area, starting out by working just one hectare of vines.

The estate grows slowly, true to a philosophy of quality over quantity, and today extends over approximately two hectares. From the very beginning, Stéphane has cultivated his vines with respect for living matter, and organic farming certification was officially initiated in 2018. In 2019, he simultaneously created a small négociant structure called le Deuxième Souffle, which allows him to purchase organic grapes from winemaker friends in Lorraine and Alsace in order to explore profiles different from those of the estate. In just a few vintages, this discreet address has become a reference point for lovers of lively, characterful wines.

Terroirs and Vines of Domaine Stéphane Cyran

The terroir of the Côtes de Toul occupies a singular position, wedged between the great wine regions of Alsace and Champagne, in a Lorraine long forgotten on wine maps. It is precisely this identity that Stéphane Cyran is helping to rehabilitate. His plots rest on clay-limestone soils, sometimes punctuated with stones and silica, which bring freshness and tension to the wines. The gradual warming of temperatures now makes this northern vineyard particularly interesting for precision viticulture.

The vines, around forty years old, are planted in the Champenoise style — that is, narrow and low-trained — which encourages consistent ripening. The grape varieties lean heavily towards dark varieties, with a predominance of Pinot Noir and Gamay, complemented by a little Chardonnay. Work in the vineyard is done without chemical inputs, by hand or by horse depending on the slope, with constant attention paid to biodiversity and terroir expression. Some grapes sourced through the négociant le Deuxième Souffle come from Alsatian terroirs of loess or black marl.

Winemaking at Domaine Stéphane Cyran

In the cellar, Stéphane Cyran extends his vineyard philosophy through the most natural winemaking possible. Fermentations take place using only indigenous yeasts, with no additions during the process or at bottling. The reds are predominantly vinified as whole clusters, with varying maceration times depending on the cuvée, resulting in refined, crunchy and thirst-quenching wines. The wines are unfiltered and then rest on their full lees, a guarantee of texture and depth.

Ageing takes place exclusively in stainless steel tanks and fibre tanks, with no wood, in order to preserve the energy and purity of the fruit. This approach, with no added sulphur and no artifice, produces vibrant, thirst-quenching wines to be enjoyed young for their freshness, though the finest bottles can also be kept in the cellar for several years.

The Cuvées of Domaine Stéphane Cyran

Acratus: this is the estate's flagship cuvée, a pure Pinot Noir from a vine in Bulligny planted on clay-limestone soils. The grapes are vinified as whole clusters, macerated for around fifteen days, then aged for one year on full lees. The result is elegant and silky, all lightness and purity of fruit, with a fine balance that makes it delicious from a young age and capable of ageing for a decade.

Gonzo: a pure and sunny Gamay born on clay and limestone soils. Harvested early, it is macerated as whole clusters for two weeks then aged for one year on lees. Crunchy and vibrant, slightly more powerful than its siblings, it offers superb fruit, freshness, depth and a lovely structure.

A Lurelure: another expression of Gamay, this intense and lively red is vinified as whole clusters, macerated for around twenty days and aged for ten months on lees. The fresh and fruity nose reveals juicy cherry, redcurrant and a hint of white pepper, while the palate is fluid, taut and energetic. A frank, indulgent and joyful wine.

Caresse et bise à l'œil: a Gamay from the estate grown on limestone soils, vinified using a so-called "trempette" method. Half of the harvest is pressed directly, while the other half macerates for eight days as whole clusters in the pressed juice, followed by one year of ageing on full lees. The result is a light, delicate and thirst-quenching red, with a pale colour and a playful character.

Siduri: an original blend of Pinot Noir, Chardonnay and Gamay, sourced from a field blend vine on the estate's clay-limestone soils. Macerated as whole clusters for approximately eight days then aged for one year on lees, these varieties compose a wine all about fresh red fruit (cherry, raspberry, redcurrant), supple, juicy and particularly easy-drinking.

À l'Origine: a more intimate cuvée from the estate, it illustrates Stéphane Cyran's creative freedom and his taste for convivial wines, in the same spirit of freshness and drinkability as the rest of the range, crafted without additives and without filtration.

Tout de go: from the négociant le Deuxième Souffle, this cuvée is a pure Gewurztraminer made from organic grapes purchased in Alsace, grown on loess soils. After direct pressing, the wine is aged for one year on full lees in stainless steel tanks, offering an aromatic and expressive white with the floral and spicy notes characteristic of the variety.

En route mauvaise troupe: also signed le Deuxième Souffle, this cuvée blends Chasselas, Pinot Blanc and Sylvaner sourced from a field blend vine grown on black marl soils in Alsace, using organic grapes. Macerated as whole clusters for five days then aged for two years on full lees in stainless steel tanks, it is a textured, lively and thirst-quenching skin-contact white with a singular profile.
