Domaine du Gringet is the direct heir to the legendary Domaine Belluard, one of the most singular and most admired wine estates in France, guardian of an ampelographic treasure unique in the world: the Gringet. This indigenous white grape variety from Haute-Savoie, present in Ayze since Antiquity and of which only around twenty hectares remain worldwide, is cultivated on the steep south-facing slopes of Ayze, at the foot of the Môle, in the Arve valley between Chamonix and Geneva. Founded by the Belluard family in the 1940s, this 10-hectare estate was brought to the pinnacle of its renown by Dominique Belluard, an exceptional winemaker who passed away in 2021 and who dedicated his life to revealing the nobility of the Gringet to the world. Since his passing, the estate has been taken over by the young and talented Vincent Ruiz, trained alongside Franck Balthazar and in collaboration with him, and renamed "Domaine du Gringet" in homage to the emblematic grape variety. Vincent Ruiz perpetuates the style and biodynamic philosophy of his predecessor, while bringing his own oenological vision, with the same ambition: to make Gringet one of the greatest white grape varieties in the world.

History of Domaine du Gringet

The history of the estate begins in the 1940s, when the Belluard family settled in Ayze, in Haute-Savoie. At that time, mixed farming dominated: the 10 hectares of land were planted with various fruit trees. Dominique Belluard's parents also cultivated a few vines up until the 1980s. It was Dominique who, after studying oenology, took over the estate in 1988 and chose to devote all his efforts to the vine and to Gringet. He then discovered that this endemic grape variety, already known in Antiquity according to certain sources, possessed an exceptional qualitative potential that no one had yet truly explored.

In the 1990s, Dominique initially followed a technical approach to viticulture learned at school, but quickly realised that the pursuit of high yields did not suit him and that his wines lacked soul. He then gradually embarked on a biodynamic conversion, ultimately achieving a complete and deeply held practice that would allow him to express the full complexity of Ayze's terroirs. Recognised as one of the greatest winemakers in Savoie, his wines were served at the finest Michelin-starred restaurants and drew admiration from wine lovers around the world. Dominique Belluard passed away in 2021, leaving behind an immense legacy. The estate then passed into the hands of Vincent Ruiz, a young winemaker trained under Franck Balthazar, in collaboration with the latter. They renamed the estate "Domaine du Gringet" to honour the grape variety at the heart of this beautiful Savoyard story.

Terroirs and Vines of Domaine du Gringet

The vineyard of Domaine du Gringet covers 10 hectares, representing half of the 20 hectares of Gringet planted in the Ayze appellation — and indeed in the entire world. This position as guardian of a unique ampelographic heritage confers upon the estate an absolute responsibility and singularity. The vines are planted on steep and rugged hillsides, fully south-facing, at around 450 metres above sea level, in the commune of Ayze, between Bonneville and Marignier, at the foot of the Môle massif. The vine composition is 95% Gringet, complemented by 3% Altesse and 2% Mondeuse. The vines grow on terroirs of great geological diversity.

Three main soil types can be distinguished: calcareous scree from the Chablais massif, sediments from very ancient glaciers forming strata of argilo-calcareous molasse, and sediments from glacial waterfalls resulting in an iron-alumina-rich red clay, characteristic of the Le Feu cuvée. The lieu-dit La Bergerie rests on the plots Le Pré Milleret and Chez Reydet, two hillsides fully south-facing on yellow marls, white marls and calcareous scree. The entire vineyard has been farmed biodynamically since the 1990s, with constant attention to natural cycles and the balance of living things.

Winemaking at Domaine du Gringet

The winemaking philosophy, inherited from Dominique Belluard and perpetuated by Vincent Ruiz, is one of minimal intervention in service of the pure expression of Gringet and the terroirs of Ayze. Harvesting is done by hand. Pressing is slow and gentle. Fermentations are spontaneous, using only indigenous yeasts. Ageing takes place in ovoid concrete and stainless steel tanks, or in oak barrels depending on the cuvée, with durations adapted to each wine. The La Bergerie cuvée is thus aged for approximately nine months on fine lees in ovoid tanks, followed by ten months' rest in bottle before release. The natural pétillants are bottled before the end of fermentation, capturing the natural bubble in an original effervescent style.

Mastery of ageing is fundamental for Gringet, a demanding grape variety that can appear austere in its youth but reveals remarkable complexity and depth with time. The mineral tension, alpine freshness and floral finesse characteristic of these wines are the result of constant care at every stage, from vine to bottle.

The cuvées of Domaine du Gringet

Les Perles du Mont Blanc (Savoie Ayze Effervescent) : The estate's iconic sparkling cuvée, the quintessential natural pétillant of Gringet. Bottled before the end of fermentation to capture the natural bubble, with no added sugar or sulphur. Fine and persistent bubbles, a nose of white flowers, fresh almond and citrus, a lively and fresh palate with a light, very digestible natural effervescence. The opening cuvée, ideal as an aperitif, with Savoyard cheeses or seafood. The name evokes the alpine bubbles rising towards the eternal snows.

Mont Blanc (Savoie Ayze Effervescent) : The estate's prestige sparkling cuvée, a natural pétillant of Gringet crafted with greater ambition and single-plot selection. An exceptional sparkling wine, more structured and complex than Les Perles du Mont Blanc, with a more persistent mousse and a more developed aromatic palette. A nose of white fruits, chalk and alpine flowers, an ample and taut palate, a long and mineral finish. A great sparkling Fine Wine for gastronomy, worthy of the summit whose name it bears.

La Bergerie (Savoie Ayze Blanc sec) : A dry white cuvée from the lieux-dits Le Pré Milleret and Chez Reydet, two hillsides fully south-facing on yellow marls, white marls and calcareous scree. 100% Gringet. Slow pressing, spontaneous fermentation, 9 months ageing on fine lees in ovoid concrete and stainless steel tanks, 10 months' rest in bottle. A nose of great finesse: white flowers, fresh citron, sweet almond and mineral notes. A straight and vibrant palate, crystalline tension, deep calcareous minerality and a saline finish. A pure and elegant expression of Gringet and its alpine terroirs. Ageing potential of several years.

Chez Edouard (Savoie Ayze Blanc sec) : A dry white cuvée from a specific plot on the estate, named after a historic lieu-dit in Ayze. 100% Gringet, vinified in a dry style with spontaneous fermentation and ageing in tanks. A characterful white wine, with aromas of alpine flowers, white fruits and schistose minerality, with a taut and fresh palate. A distinct single-plot expression from La Bergerie, reflecting the diversity of Ayze's terroirs.

Etraz (Savoie Ayze Blanc sec) : A high-expression dry white cuvée, sourced from a single-plot selection of the estate's finest terroirs. Pure Gringet, aged with precision. A wine of great mineral tension, with delicate floral aromas and a saline finish that recalls the alpine terroirs. A limpid and profound interpretation of Gringet in its most concentrated and most ambitious expression in a still style.

Le Feu (Savoie Ayze Blanc sec) : The estate's most singular dry white cuvée, sourced from a plot with soils of iron-alumina-rich red clay, a vestige of glacial waterfall sediments. This unique geological composition lends the wine incomparable depth and aromatic complexity, with notes of ripe fruits, spices and ferruginous minerality in addition to the Gringet's characteristic flowers and citrus. A gastronomic wine of great character, the pinnacle of the estate's dry white range.

La Paille (Savoie Ayze Blanc) : A white cuvée in a medium-dry or mellow style, made from Gringet selected at over-ripeness or with light drying on the vine. Aromas of ripe fruits, honey and flowers, a palate balanced between natural sweetness and lively acidity. A Gringet in its more opulent expression, to discover alongside blue-veined cheeses or white fruit desserts.

Monsieur Gringet (Savoie Ayze Blanc sec) : A tribute cuvée to the emblematic grape variety, in a style that embodies all its typicity and nobility. Beautiful mineral tension, delicate floral notes and a characteristic saline finish. A reference wine for understanding and appreciating Gringet in all its alpine singularity.

Les Grandes Jorasses (Savoie Blanc sec) : A white cuvée from Gringet or Altesse depending on the vintage, whose name evokes the famous Grandes Jorasses needles in the Mont-Blanc massif. A high-altitude white wine, taut and mineral, with crystalline aromas of citrus, flowers and chalk, a fresh palate and a long, saline finish. A cuvée dedicated to lovers of mountaineering and great mountain wines.

Mondeuse (Vin de Savoie Rouge) : The estate's only red cuvée, made from Mondeuse noire on the calcareous scree terroirs of Ayze, produced in very small quantities. An extremely rare red wine of remarkable aromatic intensity: black fruits, spices and peppery notes, with an elegant structure, fine tannins and an enchanting alpine freshness. On the palate, the Mondeuse reveals all its character, at once deep and digestible, a reflection of the estate's unique expertise. Very difficult to find — not to be missed.
