An atypical journey, a free-spirited outlook and infectious energy: Icy Liu embodies a new generation of winemakers, at the crossroads of cultures and sensibilities. Her Burgundian micro-négoce, founded with as much rigour as instinct, now produces a handful of confidential cuvées that have won unanimous praise among natural wine lovers and authentic Burgundy enthusiasts. Gamay from Beaujolais, Pinot Noir from the Côte de Beaune, Fleurie, Savigny-lès-Beaune, Mercurey… all appellations approached with the same philosophy: letting the terroir speak for itself, without artifice or dogma.
Domaine Icy Liu was born from an encounter between a woman, a territory and a deep passion for the great wines of Burgundy. Originally from China, Icy Liu discovered the world of wine at an early age and developed a particular fascination for the complexity and finesse of Burgundian wines.
After specialised studies and several professional experiences within recognised estates, she decided to settle in Burgundy to create her own structure. Her objective: to produce wines reflecting both Burgundian tradition and a modern sensibility open to the world.
Based in Côte-d'Or, the estate today works across small surfaces, primarily through grape purchasing and close partnerships with local growers. This high-end micro-négociant approach allows Icy Liu to carefully select the finest plots and vinify highly distinctive cuvées.
In just a few vintages, Domaine Icy Liu has managed to attract the attention of enthusiasts and professionals alike, becoming one of the most compelling emerging names on the new Burgundian scene.
Domaine Icy Liu draws on a mosaic of terroirs located primarily in Côte de Beaune and Côte de Nuits. The grapes come from rigorously selected plots, worked by partners who share the same commitment to quality.
The Burgundian soils, composed of clay, limestone and marl, offer an ideal terrain of expression for pinot noir and chardonnay. Each cuvée is conceived as the faithful interpretation of a precise climat, with particular attention paid to the origin of the grapes.
Even though the estate does not claim any certification, the majority of the vines are cultivated according to principles close to organic farming: soil work, respect for biodiversity, manual harvesting and moderate yields.
This approach makes it possible to produce grapes of great purity, an indispensable foundation for the creation of rare and authentic wines that are faithful reflections of their appellations.
In the cellar, Icy Liu favours a highly respectful approach to the raw material. Vinifications are conducted with minimal intervention so as to let the terroir and the vintage speak for themselves.
For red Burgundies, the grapes are generally partially destemmed, with gentle macerations and delicate extractions. The ageing takes place in French oak barrels, with a carefully measured proportion of new wood to preserve the elegance of the pinot noir.
Burgundy white wines benefit from precise pressing, natural fermentations and ageing on fine lees, bringing texture and complexity without ever masking the freshness.

This introductory cuvée expresses all the freshness of Burgundian chardonnay: notes of citrus, white flowers and white-fleshed fruits. A precise and accessible white wine, perfect for discovering the estate's style.

Depending on the vintage, the estate may also offer more exclusive cuvées, produced from rare plots or limited selections, highly sought after by lovers of great Burgundian wines.
The red wines of Domaine Icy Liu, predominantly made from pinot noir, are served between 15 and 17 °C to fully express their fruit, structure and finesse. The white wines, made from chardonnay, are enjoyed between 11 and 13 °C in order to preserve their freshness and aromatic tension. A brief aeration of around thirty minutes is recommended for young or closed red wines, while older cuvées are opened just before serving to protect their delicate aromas.
The red cuvées pair well with grilled red meats, poultry, light braised dishes and certain aged pressed-rind cheeses. The chardonnays accompany fish, seafood, shellfish, poultry and pressed-rind cheeses. The more evolved cuvées or those from great terroirs can be matched with gastronomic dishes or subtle surf-and-turf pairings.
For red wines, the vintages 2010, 2013, 2015 and 2018 stand out for their balance, finesse and ageing capacity. For white wines, the vintages 2012, 2014 and 2018 are recognised for their aromatic purity and ageing potential. Even in more challenging vintages, the estate consistently produces wines of outstanding quality.
Red wines can be cellared for between 5 and 15 years depending on the cuvée and the vintage, while the whites can evolve for between 5 and 12 years. They should be stored on their side, away from light, in a stable cellar between 12 and 14 °C, with moderate humidity. Proper storage allows the wines to develop complexity and finesse while retaining their freshness.
