The vinifications are parcel-based and conducted gently. Indeed, Patrick Jasmin focuses on aromatic finesse rather than power. He thus obtains elegant and supple wines, with a very fresh and distinguished aromatic palette, which expresses all the typicity of his terroir. The élevages are long (about 24 months) and very delicate. Domaine Patrick Jasmin produces very elegant red Côte-Rôtie wines, which can be considered as models of the expression of this magnificent terroir. The estate's wines are very pleasant to drink young, but nevertheless hold very good aging potential. The Côte-Rôtie "La Giroflarie" from Domaine JASMIN here symbolizes all the typicity of this terroir, with a fruity and indulgent nose offering a palette ranging from well-ripened red berries, to cocoa, through gentle spiced notes. On the palate, the wine is delicate, with present but integrated oak, fine and silky tannins. The wine plays much more the card of finesse than that of power. With an elegant and supple style, endowed with a superb fresh and distinguished aromatic palette, less concentrated but with good length, this Côte-Rôtie will take on its true dimension at the table, with supreme elegance. Depending on the vintages, the Côte-Rôtie can age happily for 10 to 15 years. In addition to its Côte-Rôtie cuvée, Domaine JASMIN produces an IGP Collines Rhodaniennes cuvée "La Chevalière" made from Syrah. "La Chevalière" exudes a smoky nose, with beautiful depth of black fruits, while its palate is quite dense and its finish tender and fruity. A beautiful success to accompany a meat dish.
