History of Domaine de Chassorney – Frédéric Cossard

The history of Domaine de Chassorney begins in 1996, when Frédéric Cossard, the son of a dairy farmer, decided to fulfill his dream of becoming a winemaker. After a career as a wine broker, during which he developed an in-depth knowledge of Burgundian terroirs, Frédéric, accompanied by his partner Laure, settled in Saint-Romain. They started with a few ares of vines in the appellations of Saint-Romain, Auxey-Duresses and Savigny-les-Beaune. Over the years, the estate grew to reach today 10 hectares, covering prestigious appellations such as Pommard, Volnay, Nuits-Saint-Georges and Bourgogne-Hautes Côtes de Beaune.

In 2006, Frédéric and Laure diversified their activities by creating SARL Frédéric Cossard, a négociant house that allows them to vinify organic grapes from mythical climat sites such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Chambolle-Musigny, Vosne-Romanée, as well as crus from Beaujolais, the Jura and the Languedoc. This dual activity — estate and négociant — reflects their commitment to elevating terroirs while respecting a natural philosophy. In 2022, Frédéric handed over Domaine de Chassorney to Aurélien Verdet, a winemaker who shares the same values, while continuing his négociant activities under his own name. This transition marks a new era for the domaine, while preserving its legacy of excellence.

Terroirs and Vines of Domaine de Chassorney – Frédéric Cossard

Domaine de Chassorney extends over 10 hectares of vines, located mainly in the Côte de Beaune, with plots in Saint-Romain, Auxey-Duresses, Pommard, Volnay and Bourgogne-Hautes Côtes de Beaune. These terroirs, rich in limestone, clay-limestone and marl-limestone soils, give the wines a distinctive minerality and aromatic complexity. The grapes sourced from the négociant side, meanwhile, come from renowned climat sites in the Côte de Nuits (such as Nuits-Saint-Georges or Chambolle-Musigny) and the Côte Chalonnaise, as well as from granite soils in Beaujolais.

The grape varieties are typically Burgundian: Pinot Noir for the reds and Chardonnay for the whites, with vines averaging 40 years of age, guaranteeing fine concentration. For the négociant cuvées, one also finds Aligoté, Gamay (Beaujolais), Savagnin (Jura), as well as Bourboulenc, Grenache Blanc and Muscat (Languedoc). The vines are cultivated according to biodynamic principles, with horse ploughing, homeopathic treatments based on essential oils, and minimal use of copper and sulphur. The harvest, carried out by hand at full ripeness in late October, preserves the integrity of the grapes, which is essential for natural winemaking.

Winemaking at Domaine de Chassorney – Frédéric Cossard

Frédéric Cossard's philosophy rests on minimal intervention, both in the vineyard and in the cellar, in order to let the terroir express itself. The winemaking is entirely natural, with no addition of exogenous yeasts, sulphur or temperature control. For the reds, a pre-fermentation maceration of 3 to 9 days precedes a fermentation with the stems for 5 to 6 weeks, followed by malolactic fermentation in tank. The red wines are aged in oak barrels for 12 to 15 months, although Frédéric is increasingly experimenting with concrete eggs, Georgian qvevris and glass wine globes to minimise the influence of wood.

For the whites, the musts undergo cold pre-fermentation for two weeks, followed by fermentation in barrels for approximately 8 months. Filtration is carried out by gravity, and the wines are bottled without the addition of sulphur, guaranteeing unparalleled purity and vibrancy. This rigorous approach, inherited from Frédéric's experiences in the dairy industry, makes it possible to produce wines that faithfully reflect their origin, with rare elegance and frankness.

The Cuvées of Domaine de Chassorney – Frédéric Cossard

Domaine de Chassorney and SARL Frédéric Cossard offer a range of more than 50 cuvées, each expressing a unique terroir. Here is an overview of the main cuvées:

La Chassornade: Natural sparkling Aligoté, fresh and hazy, with notes of lemon, sea salt and chalky minerals. Ideal as a refreshing aperitif.

Zizifrédo: Blend of Grenache Blanc and Muscat d'Alexandrie, amber-hued, long-macerated. Tropical fruits and savory notes, perfect for bold pairings.

Chardonnay: Jura Chardonnay on marl, aged in concrete eggs. Stone fruit, lively acidity and a saline finish — a vibrant classic.

Feel Good: Ouillé Savagnin, energetic, vinified in concrete eggs. Citrus, minerals and electric tension for a lively experience.

Feel Good Qvevris: Ouillé Savagnin aged in Georgian qvevris. Citrus, minerals and a long saline finish — original and expressive.

Bourgogne Blanc Bigotes: Chardonnay on clay-limestone near Puligny, aged in concrete eggs. Mineral, stone fruit and a saline finish.

Beaune Les Bressandes: Chardonnay on sand and clay, powerful and refined. Depth and distinctive salinity on the finish.

Nuits-Saint-Georges Aux Croix Rouges: Rare Chardonnay from Nuits-Saint-Georges, complex and mineral, with great finesse.

Chassagne-Montrachet 1er Cru Abbaye de Morgeot: Concentrated Chardonnay from a clay-limestone terroir, deep, ideal for aging.

Puligny-Montrachet: Pure, unoaked Chardonnay, offering power, precision and elegance. Vibrant and balanced.

Puligny-Montrachet 1er Cru Les Folatières: Dense Chardonnay on clay-limestone, balanced, with great aging potential.

Pinot Noir: Jura Pinot Noir on marl, aged in concrete eggs. Fragrant, with red berries, earth and minerals.

Bourgogne Rouge Bedeau: Pinot Noir from Volnay and Nuits-Saint-Georges, fermented as whole clusters. Ruby, fragrant, with berries and violets.

Santenay 1er Cru Passetemps: Organic Pinot Noir, explosive, with dark berries, earth and silky tannins. Approachable young.

Nuits-Saint-Georges Les Damodes: Elegant Pinot Noir close to Vosne-Romanée, powerful, ideal for aging.

Gevrey-Chambertin Les Genevrières: Pinot Noir aged in qvevris, vibrant, with red fruits and a hint of undergrowth.

Chambolle-Musigny Les Herbues: Delicate Pinot Noir, notes of red berries, rose and spices. Ethereal and refined.

Vosne-Romanée Les Champs Perdrix: Compact and elegant Pinot Noir, close to La Tâche, precise and promising.

Morey-Saint-Denis Les Champs de La Vigne: Pinot Fin aged in qvevris, fruity, mineral and complex.

Morey-Saint-Denis 1er Cru Les Monts Luisants: Pinot Noir close to Clos de la Roche, complex, elegant and deep.
