History of Domaine François Gaunoux

The history of Domaine François Gaunoux is deeply rooted in the Burgundian soil, where the family has been established for several centuries. François Gaunoux, son of the celebrated Henri Gaunoux, iconic winemaker of Pommard, has worked the vines since the age of fifteen. A pioneering viticulturist, he spent more than forty years buying back and consolidating plots in order to retain only the finest climats of the Côte de Beaune. Not a single vine at the estate is leased: the entire vineyard belongs outright to the family, a guarantee of consistency and exacting standards rare in the region. President of the Viticulture Committee of the Côte d'Or for many years, François Gaunoux has left his mark on the recent history of Burgundy through his passion and uncompromising standards.

Since 2000, his daughter Claudine Gaunoux has joined the family venture and perpetuates this heritage with a sensibility all her own, assisted by her partner Jean-Pierre Tournier. Under her influence, the estate took a singular direction from 2001 onwards, almost swimming against the tide of the Côte d'Or, by renouncing barrel ageing entirely. This lineage, passed from father to daughter, combines respect for a centuries-old tradition with a resolutely modern vision of Burgundy wine.

Terroirs and Vines of Domaine François Gaunoux

The vineyard of Domaine François Gaunoux covers around ten hectares, planted exclusively on the most renowned climats of the Côte de Beaune. Chardonnay and Pinot Noir thrive on clay-limestone soils of great diversity, where each plot expresses a distinct personality. In Meursault, the estate cultivates two exceptional monopoles, the Clos de Tavaux and the Clos des Meix Chavaux, the latter acquired in 2013 across 3.47 hectares of old vines planted in the 1970s, some of which are over a century old. The Premier Cru La Goutte d'Or, a jewel of the appellation, completes this holding.

In Pommard, the family owns three of the appellation's most prestigious Premier Crus: Les Rugiens, Les Epenots and Les Grands Epenots, complemented by the village climat Les Tavannes. In Volnay, the Premier Cru Le Clos des Chênes embodies the aristocratic finesse of this terroir. In Beaune, the Premier Cru Le Clos des Mouches is one of the estate's great red wines. Vine management is traditional and meticulous: reasoned pruning, rigorous disbudding, careful shoot positioning, respectful cane tying and precise ploughing punctuate the work throughout the year.

Vinifications at Domaine François Gaunoux

Winemaking at Domaine François Gaunoux is built on a radical and singular principle: the complete absence of barrel ageing. This approach, adopted from 2001 onwards, makes the estate a unique case in Burgundy, where the oak barrel nonetheless remains the near-obligatory instrument of the great crus. Here, everything takes place in computer-thermoregulated stainless steel tanks, guaranteeing a clear reading of the vintage and the climat. Harvesting is exclusively manual, carried out in small baskets between September and October. The grapes arrive whole at the winery, where they are systematically 100% destemmed, with no stems retained.

For red wines, traditional cuvaison extends over twenty to twenty-five days depending on the vintage, in self-pigeage tanks. White wines are pressed in a pneumatic press before fermentation in stainless steel tanks. The ageing, particularly long, lasts between sixteen and eighteen months, sometimes more, spanning two full winters, always in stainless steel. This refined method preserves the freshness, aromatic purity and mineral precision of the cuvées, which prove surprisingly approachable in their youth while retaining a remarkable ageing potential.

Meursault Clos de Tavaux Monopole (white): the estate's emblematic monopole, this village Meursault stands out for its crystalline purity and its balance between richness and mineral tension. Vinified entirely in stainless steel tanks, it delivers a floral and fruity nose of great frankness, with a silky palate that conveys the full nobility of Meursault's limestone subsoil.

Meursault Clos des Meix Chavaux Monopole (white): sourced from 3.47 hectares of old vines, some of which are over a century old, this monopole acquired in 2013 offers a nose of great purity, where floral scents of hawthorn and honeysuckle intertwine with honeyed touches and citrus notes. The palate combines richness and freshness in a refined juice, already approachable yet capable of improving over a decade and beyond.

Meursault Premier Cru La Goutte d'Or (white): a Fine Wine from one of the most renowned climats of Meursault, La Goutte d'Or captivates with its golden-hued colour and its open nose of exotic fruits, pineapple, peach, fresh butter and honey. The attack is lively, the texture enveloping and creamy, supported by a taut finish that extends the wine with elegance.

Puligny-Montrachet (white): a more recent acquisition, this cuvée enriches the estate's range of great white wines. It expresses with finesse the breed and precision of Chardonnay on the soils of Puligny, in a style that remains pure, without any use of oak, faithful to the house's signature.

Beaune Premier Cru Le Clos des Mouches (red): produced from one of the most celebrated climats of Beaune, this Premier Cru stands out for its deep colour and a nose with notes of red and black fruits, cherry and leather. The palate is round, refined and elegant, supported by a silky tannic structure.

Volnay Premier Cru Le Clos des Chênes (red): a signature expression of Volnay's finesse, this cuvée captivates with its vivacity, its perfectly mastered slight acidity and its brilliant fruitiness. Pinot Noir unfolds an aristocratic elegance here, blending wild strawberries, violet and delicate spices, within a fine and persistent framework.

Pommard Les Tavannes (red): a village cuvée from a renowned climat of Pommard, it illustrates the generosity and restrained power characteristic of the appellation. The nose offers fleshy black fruits, the palate reveals a dense structure, supple tannins and a generous finish.

Pommard Premier Cru Les Epenots (red): a great classic of Pommard, this Premier Cru unfolds on a deep and multidimensional nose, blending black fruits, undergrowth and spices. The palate, of a chewy concentration, reveals a growing intensity and a long finish, built for ageing.

Pommard Premier Cru Les Grands Epenots (red): a direct neighbour of Les Epenots, this climat yields a wine with a deep colour and a powerfully aromatic nose. The palate, ample and saline, is distinguished by great breed and considerable ageing potential, faithful to the reputation of the greatest Pommards.

Pommard Premier Cru Les Rugiens (red): undoubtedly the estate's most emblematic red cuvée, this Premier Cru — often cited as deserving Grand Cru status — offers a nose of great floral beauty, underpinned by a voluminous, fresh and deep palate. Its saline and captivating finish makes it an exceptional wine, built for very long ageing.
