Located in Brochon, on the prestigious Route des Grands Crus of the Côte de Nuits, Domaine Lippe Boileau is one of the finest recent revelations from Burgundy. Founded in 2017 by Caroline Lippe, the daughter of a winegrower representing the seventh family generation, and Julien Boileau, a former master cooper, this young estate cultivates three hectares spread across some twenty plots in the appellations Bourgogne Côte d'Or, Fixin, Côte de Nuits Villages and Gevrey-Chambertin. Vinified with finesse, focused on fruit and with a restrained use of oak inherited from Julien's cooperage expertise, the estate's wines captivate with their precision, elegance and faithful expression of the great terroirs of Brochon and the Côte de Nuits.
The story of Domaine Lippe Boileau begins in 2017, when Caroline Lippe and Julien Boileau, a young couple with an evident complementarity, decided to take over part of the family vines to found their own domaine. Caroline embodies the seventh generation of a family of Burgundian winegrowers deeply rooted in the Côte de Nuits, while Julien, after fourteen years as a master cooper, brings an intimate and invaluable knowledge of wood and ageing. His grandfather was also a winegrower, and it is entirely naturally that this crossing of paths led them to create their own address.
To complete their knowledge, the couple obtained a diploma in Beaune in 2017, with a clear ambition: to craft wines that reflect their own identity, founded on the brilliance of fruit, in perfect harmony with the oak of the barrel and the delicacy characteristic of the great pinot noirs of the Côte de Nuits. The domaine is established in a beautiful house dating from 1700, at number 18 on the Route des Grands Crus in Brochon, a discreet village nestled between Fixin and Gevrey-Chambertin. The first vintage, in 2018, was immediately noticed by critics, and the Guide Hachette des Vins quickly recognised several of the domaine's cuvées, confirming the arrival of a new talent to watch in Burgundy.
The vineyard of Domaine Lippe Boileau covers approximately three hectares, fragmented into around twenty plots scattered primarily around Brochon, on the Côte de Nuits. This mosaic of climats allows the couple to draw on a beautiful diversity of soils and aspects, characteristic of the Burgundian viticultural puzzle. The appellations cultivated are among the most emblematic of the Côte: Bourgogne Côte d'Or, Fixin, Côte de Nuits Villages and Gevrey-Chambertin, with the latter constituting the jewel of the domaine.
Several plots still bear the traces of time: old dry-stone walls, century-old walls and vines over eighty years old in certain Gevrey-Chambertin climats. Pinot noir reigns supreme here, planted on clay-limestone soils rich in stones and particularly well-drained. Harvests are entirely manual, perpetuating the family tradition that sees family and friends — from the youngest to the oldest — gather each year to pick the grapes with respect for the fruit and the terroir.
In the cellar, Domaine Lippe Boileau cultivates a philosophy of respect for the fruit and restraint in the use of oak — a natural approach for a former master cooper who understands its subtleties better than anyone. Vinification is carried out with mostly destemmed grapes, with a few stems occasionally retained to bring length and freshness to the palate. The couple favours gentle extractions in order to preserve the delicacy and aromatic brilliance of the pinot noir.
The ageing takes place in oak barrels, with a measured proportion of new wood — around 30% for the Gevrey-Chambertin wines and significantly less for the entry-level and mid-range cuvées. The aim is clear: the oak should support the wine without ever marking it or masking the expression of the climat. Volumes are modest, often ranging from a few hundred to a thousand bottles per cuvée, which gives each wine an artisanal and exclusive character. A portion of the production is still sold through négociant channels, while the domaine continues to grow and works towards eventually vinifying everything in-house.
Bourgogne Côte d'Or (red): drawn primarily from the Moutier sur Brochon climat, this entry-level cuvée offers outstanding value for money. The nose opens on fresh cherry and wild sloe, while the palate is silky, fruity, indulgent and thirst-quenching. A generic Burgundy of rare clarity, perfectly embodying the house style.
Bourgogne Pinot Blanc: a rarer and more exclusive cuvée, this Burgundy in pinot blanc brings diversity to the range. It is distinguished by lovely purity, a floral and fruity nose, and a fresh, slightly taut palate that makes for a pleasant change from the classic chardonnays of the region.
Côte de Nuits Villages Créole: a name derived from "crais", evoking the presence of small stones in this terroir of Brochon. The wine displays intense notes of dark fruits (blackcurrant, blackberry, blueberry), oscillating between fruit and vanilla. The palate asserts concentration, fine power and length, in a structured style with promising ageing potential.
Côte de Nuits Villages Vignois (Vieilles Vignes): a second expression from the domaine in Côte de Nuits Villages, sourced from old vines in the Vignois climat. This cuvée asserts a denser character, tighter tannins and a concentrated texture, built for ageing over several years.
Fixin Les Vignes Aux Grands: the domaine's signature on the neighbouring Fixin appellation, this wine unfolds the power and noble rusticity characteristic of the cru. The nose reveals notes of fleshy dark fruits and spices, while the palate unveils a structured, energetic texture, supported by firm tannins and a freshness that is the hallmark of its elegance.
Gevrey-Chambertin (village): a village-level cuvée sourced from the Le Carré Rougeaud climat, planted with vines around eighty years old. A spontaneously seductive Gevrey, which opens on notes of candied dark fruits, cherry and vanilla. The palate reveals an ample and concentrated texture, supported by melted tannins and a fine freshness, before a beautifully toasted finish.
Gevrey-Chambertin Les Évocelles: a grand single-vineyard cuvée sourced from a climat located in the commune of Brochon, to the north of Gevrey, on the upper part of the hillside. The domaine works 35 ares here, yielding a wine of beautiful generosity. Spiced, floral and fruity nuances on the nose, a structured and age-worthy texture on the palate, highlighted by a fresh and energetic framework. A rare production, of around 600 bottles depending on the vintage.
Gevrey-Chambertin Vieilles Vignes: another expression from the domaine on the flagship appellation, this cuvée is sourced from the oldest vines in the estate. It is characterised by great aromatic depth, a dense palate with notes of dark fruits, liquorice and pepper, fine and silky tannins, and a remarkable ageing potential.
