Coming straight from Germany, the very promising Thomas Theibert is behind the highly regarded production of Domaine de l'Horizon located in Languedoc Roussillon in Calce.
A young winemaker with experience, he honed his skills in Germany at the estates of Franz Keller and Wörwag before working in numerous vineyards around the world (Italy, Austria, South Africa... and even in Bordeaux at Château Canon la Gaffelière in the Saint-Emilion appellation). He later returned to his homeland and became manager of the Manincor estate before finally spreading his wings... It was in 2006 that he decided to launch the operation of this 15-hectare estate at the foot of the Pyrenees. A disciple of Gérard Gauby, his wines quickly gained recognition and didn't take long to find their own expression: the whites made from Maccabeu, Grenache Gris and Muscat à Petits Grains (4, 2 and 2 hectares respectively). And the reds, made from Carignan (4.5ha), Grenache Noir (2ha) and Syrah (0.5ha). The management of these vines averaging 65 years old, planted on soil of limestone, marl and schist was initially organic. But Thomas Theibert didn't stop there in his quest for naturalness, converting his operation to biodynamics in 2008. A completely natural approach that is also found in the cellar with the use of indigenous yeasts and infusion rather than extraction. The aging, meanwhile, averages one year and takes place in the famous casks from the prestigious Stockinger house with which he had already worked before. The wines of Domaine de l'Horizon, in the IGP Coteaux du Languedoc appellation, are wines with a fine and fruity profile. With remarkable freshness (both in reds and whites), this estate stands apart from the popular opinion that associates Languedoc wines with alcohol and over-ripeness. Wines strongly encouraged by critics and acclaimed by enthusiasts, with incredibly low yields at the level of Château d'Yquem, Domaine Leroy or Romanée Conti... indeed, they are estimated between 10 to 15 hl/ha, which is 3 to 4 times less than a Bordeaux grand cru.
