The Domaine Vincent Dauvissat is considered one of the absolute references of the Chablis appellation, alongside Domaine Raveneau. Dauvissat's Chablis wines are world-renowned for their freshness, minerality, purity, and great ageing potential. This reputation rests on a winemaking philosophy founded on a fundamental principle: allowing the terroir to express itself with minimal intervention. The result: wines of rare precision and sincerity, immediately recognisable.
The Vincent Dauvissat estate covers 12.7 hectares, spread across the four emblematic appellations of Chablis: Petit Chablis, Chablis Village, Chablis Premier Cru and Chablis Grand Cru. The estate produces 2 Chablis Grands Crus, 3 Chablis Premiers Crus, 1 Chablis Village, 1 Petit Chablis, as well as an Irancy. Among the most sought-after cuvées are the Premiers Crus La Forest, Vaillons and Séchet, as well as the Grands Crus Les Clos and Les Preuses.
The white wines from the René et Vincent Dauvissat estate are made from Chardonnay. Recognisable by their golden-green colour, they offer aromas of white fruits and citrus, with a fine balance between acidity and minerality. These characteristics make them ideal companions for seafood, oysters, lobster, noble fish in sauce, or aged goat's cheese. The Irancy, the estate's only red wine made from Pinot Noir, pairs perfectly with meats and cheeses.
The estate is rooted in a long Chablis family tradition. The history of Domaine Vincent Dauvissat begins in 1931, when Robert Dauvissat, Vincent's grandfather, decided to bottle his own wines — a practice that was innovative at the time in Chablis. Vincent joined his father in the late 1970s and took over the estate in 1989. Since 2013, his children Ghislain and Étiennette have been carrying on this legacy, ensuring the continuity of this exceptional house across four generations.
The wines from Domaine Vincent Dauvissat are built for long ageing. It is advisable to leave them in the cellar for at least five years. The Grands Crus such as Les Clos or Les Preuses can easily improve over ten to twenty years, or even longer for great vintages. The Chablis Village, for its part, is ideal for drinking within 5 to 10 years. Patience is therefore an essential virtue to fully enjoy these exceptional wines.
Since 2002, the Domaine Vincent Dauvissat has practiced biodynamic farming, using natural preparations to strengthen the vitality of the vines, without ever seeking official certification. Yields remain modest and the minimally interventionist winemaking is carried out in oak barrels, in total respect of the Chablis terroir. This approach gives rise to wines of great purity and a particularly authentic expression.
