Originally from Montreal, Canada, Patrick Piuze has always had a deep passion for wine. At just 18, a pivotal encounter with Marc Chapoutier set him on a path toward a career in wine. After gaining experience in vineyards in Australia, South Africa, and Israel, Patrick decided to settle in Burgundy. In 2000, he joined Olivier Leflaive’s winery in Chablis, where he honed his winemaking skills.

After years of learning from Leflaive, Jean-Marc Brocard, and Jean-Marie Guffens, Patrick Piuze decided to establish his own domaine in 2008. This marked the beginning of a remarkable journey that made Patrick one of Chablis’s leading producers. His visionary approach and respect for terroir quickly earned him a place alongside the region’s great names.

One distinctive feature of Domaine Patrick Piuze is that it owns no vineyards. As both a négociant and a winemaker, however, Patrick has built strong, trusting relationships with local growers. Thanks to these long-term partnerships, he meticulously selects the best old-vine parcels throughout the Chablis wine region.

Chablis has remarkably diverse terroirs, with soils ranging from limestone to marl, each lending the wines a unique character. Patrick Piuze draws on this richness through selections from individual parcels, including prestigious sites in Chablis Grand Cru, Premier Cru, and village-level Chablis. His wines capture the minerality and finesse of Chablis’s varied microclimates, revealing the full complexity and purity of Chardonnay.

Winemaking at Domaine Patrick Piuze

Patrick Piuze takes a hands-on, rigorous approach to winemaking. Unlike most Chablis producers, who harvest mechanically, Patrick picks all his grapes by hand. This allows him to select the best fruit, essential to producing wines of exceptional quality.

In the winery, fermentation starts spontaneously without the addition of yeast. The village-level cuvées are vinified in stainless steel tanks, while the Premiers and Grands Crus are aged in used barrels, primarily ones previously used for high-acidity vintages. Patrick avoids barrels that are too new to prevent overly pronounced oak aromas and preserve the purity of the fruit and terroir. 

At Patrick Piuze, winemaking involves minimal temperature control, allowing the wines to express themselves naturally in keeping with each vintage. Each cuvée is also aged on fine lees, giving it a silky texture and appealing aromatic complexity.
