History of Domaine Patrick Piuze

Patrick Piuze, originally from Montreal, Canada, has always been driven by a deep passion for wine. At the age of 18, a pivotal encounter with Marc Chapoutier steered him toward a career in the world of wine. After gaining experience in vineyards in Australia, South Africa, and Israel, Patrick decided to settle in Burgundy. In 2000, he joined Olivier Leflaive's cellar in Chablis, where he honed his winemaking skills.

After years of learning alongside Leflaive, Jean-Marc Brocard, and Jean-Marie Guffens, Patrick Piuze decided to establish his own domaine in 2008. This decision marked the beginning of an exceptional adventure that propelled Patrick among the finest producers of Chablis. His visionary approach and respect for the terroir allowed him to quickly rise to stand alongside the great names of the region.

One of the distinctive features of Domaine Patrick Piuze is that he does not own any vineyards outright. However, as a négociant and winegrower, Patrick has built solid and trusted relationships with local growers. Patrick Piuze harnesses this richness through single-parcel selections, particularly in prestigious areas such as Chablis Grand Cru, Premier Cru, and Chablis Village. Winemaking at Domaine Patrick Piuze

Patrick Piuze adopts an artisanal and rigorous approach to winemaking. Unlike the majority of Chablis producers, who use mechanical harvesting, Patrick picks all his grapes by hand. This method allows for the selection of the finest fruit, essential for producing wines of exceptional quality.

In the cellar, fermentations are carried out spontaneously, without the addition of yeasts. The village cuvées are vinified in stainless steel tanks, while the Premiers and Grands Crus benefit from ageing in used barrels sourced primarily from high-acidity vintages. Patrick takes care never to use barrels that are too new, so as to avoid overly pronounced oaky aromas and thus preserve the purity of the fruit and the terroir. 

Winemaking at Patrick Piuze is characterised by minimal temperature control, allowing the wines to express themselves naturally at the pace of each vintage. Each cuvée also benefits from ageing on fine lees, ensuring a silky texture and beautiful aromatic complexity.
