The Jean-Paul Droin estate (Jean Paul and Benoît) is located in Chablis in Burgundy, and the Droin family has been established in Chablis since the 16th century. The DROIN estate currently holds an exceptional heritage of Chablis crus across 26 hectares. Jean-Paul Droin began at the estate in 1965 at the age of 14… and retired in 2014, at which point his son Benoît succeeded him after already having spent 15 years by his side. At the Jean-Paul Droin estate, each wine has its own identity and sincerely expresses the character of its soil, in order to highlight the diversity of the 16 climats that make up the estate.

History of Domaine Jean-Paul Droin

The history of Domaine Jean-Paul Droin is intimately linked to that of Chablis and Burgundian viticulture. The first member of the family, Jehan Droin, is mentioned in 1547, already cultivating vines in this region. Since then, successive generations of Droin have each left their mark on their era through their involvement in the protection and promotion of Chablis wines. 

In 1923, Louis Droin, the great-grandfather of the current owner, was elected president of the Union des Propriétaires Vignerons de Chablis, an institution that would later become the Syndicat de Défense de l'Appellation Chablis. This role bears witness to the Droin family's commitment to preserving the authenticity of the region's wines, by combating fraud and guaranteeing the origin of the wines.

Jean-Paul Droin took over the reins of the estate in 1983, progressively modernising practices while maintaining the family heritage. He was joined by his son Benoît in 1999, a graduate in oenology from the University of Dijon, who brought with him an innovative vision focused on precision and the expression of terroirs. In 2014, Benoît assumed full responsibility for the estate, and continues today to lead the vineyard towards new heights while honouring family traditions.

Terroirs and Vines of Domaine Jean-Paul Droin

Domaine Jean-Paul Droin enjoys an exceptional position at the heart of Chablis, with a vineyard of 26 hectares composed of plots meticulously acquired over the generations. The estate is spread across several prestigious appellations, including Grands Crus and Premiers Crus, enabling the production of a varied range of wines faithfully reflecting the diversity of Chablis terroirs.

The Chablis terroir is essentially composed of Kimmeridgian soils, a geological formation dating from the Jurassic period, rich in marl and marine fossils. This soil imparts an unrivalled minerality and purity to Chablis wines, with saline notes and unique oyster shell aromas. The plots of Domaine Jean-Paul Droin, situated on well-exposed slopes, take full advantage of this exceptional terroir.

The vines, with an average age of 45 years, are cultivated according to the principles of integrated pest management. This environmentally respectful approach favours the natural balance of the soils and the health of the vines, with minimal use of chemical treatments. Harvesting is carried out by hand or by machine depending on the age and accessibility of the plots, thus ensuring an optimal harvest for each cuvée.

Winemaking at Domaine Jean-Paul Droin

Winemaking at Domaine Jean-Paul Droin rests on a subtle balance between tradition and modernity. From the 1980s onwards, Jean-Paul Droin reintroduced the use of oak barrels for certain cuvées, in order to bring greater complexity and depth to the wines. However, the proportion of new wood remains measured so as to preserve the freshness and purity of the aromas, which are characteristic of Chablis wines.

The grapes are carefully pressed using pneumatic presses, a gentle process that preserves the quality of the juice. Fermentation takes place with indigenous yeasts, without any external addition, in stainless steel tanks or barrels depending on the profile sought for each wine. The Droins also carry out enzymatic settling and practise light fining and filtration before bottling, thus ensuring perfect clarity without altering the structure of the wine.
