History of Domaine de la Porte Saint Jean

Before settling down, Sylvain Dittière traveled widely and learned a great deal. His training took him to leading winegrowers: Domaine Gauby and Cyril Fhal in Roussillon, Marc Tempé in Alsace, Guy Bossard in the Nantes wine region, then to the Saumur area at Thierry Germain, Château Yvonne, Domaine du Collier, and the legendary Clos Rougeard. From these experiences, he took away two words that became his guiding principles: precision and patience.

In 2010, at the age of twenty-four, he founded his estate in Montreuil-Bellay with three hectares of leased vines and grapes purchased from growers who farmed organically. The property’s name, La Porte Saint Jean, would also become the name of his founding cuvée. Year after year, Sylvain buys the plots he works to become their owner, gradually expands the vineyard, and refines his aging methods. His partner Pauline Foucault, daughter of Charly Foucault of Clos Rougeard, joins him on the journey. Recognition comes quickly: the cuvées sell out at the estate as soon as they are released, and the specialist press hails an impressive debut in the leading wine guides.

Terroirs and Vines of Domaine de la Porte Saint Jean

The vineyards extend around Montreuil-Bellay and the Saumur-Champigny appellation, on soils typical of the Saumur region but with distinct differences from plot to plot. The namesake cuvée comes from vines around forty years old, planted in clay, silt, and sandy soil over Middle Turonian limestone—the region’s famous tuffeau. Les Cormiers, by contrast, sits on hard limestone with flint scattered across the surface, lending tension and minerality. The Les Pouches vineyard site, on the outskirts of Montreuil-Bellay, yields two versions: a red from the lower section up to the midpoint of the slope, and a white with a remarkable balance of roundness and mineral energy.

The vines are around fifty years old on average, and some Chenin plots are between sixty and ninety years old, accounting for the depth and natural concentration of the juice. Cabernet Franc is by far the dominant grape variety, complemented by Chenin and a small area of Sauvignon Blanc. The entire estate is farmed organically, though it does not claim certification: no synthetic chemicals, insecticides, or fungicides are used; the soils are cultivated and weeded mechanically, with daily attention paid to the health of the vineyard. Harvesting is done by hand, with a rigorous two-stage sorting process in which Sylvain himself takes part at the final stage.

Winemaking at Domaine de la Porte Saint Jean

The cellar philosophy can be summed up in one sentence: add nothing and force nothing. The red grapes are completely destemmed, then fermented in tanks without added yeast, enzymes, assimilable nitrogen, or any other additives. Maceration lasts around six weeks, far longer than the regional average, yet there is no extraction: no pumping over, punching down, or wetting the cap. This apparent paradox produces wines with a silky texture and surprisingly fine tannins, a world away from the muscular Cabernet Francs one might expect.

The wines are then transferred by gravity into barrels in a 16th-century underground limestone cellar, where they rest for eighteen to twenty-four months, depending on the cuvée. Aging an entry-level cuvée for so long remains rare in the region and illustrates the care given to every wine. Sulfur is added only at bottling, in a tiny dose, bringing total sulfur to around 20 to 30 milligrams per liter. The whites follow the same patient approach, with extended barrel aging that gives them richness, a full texture, and considerable aging potential.

The cuvées of Domaine de la Porte Saint Jean

La Porte Saint Jean is the estate’s founding cuvée and its signature wine, a Saumur-Champigny made entirely from Cabernet Franc from the same single plot since its creation. The vines, around forty years old, grow in clay, silt, and sandy soil over Middle Turonian limestone, and the wine spends eighteen months in barrels. Its style is both generous and refined: a bouquet of dark fruit, cherry, and raspberry, floral and spicy notes, and a signature hint of cold ash and pencil lead that gives the house its distinctive character. On the palate, the mastery of the tannins is impressive, the texture is velvety and juicy, and the balance promises excellent aging potential. A Saumur-Champigny to decant and serve with red meat, game birds, or roasted vegetables.

Les Pouches rouge is named after its vineyard site on the outskirts of Montreuil-Bellay and comes from the lower section of the plot up to the midpoint of the slope. This Cabernet Franc Saumur red is deeper and denser than the estate cuvée, with a compact texture, ripe dark fruit, and notes of undergrowth and spice. A long maceration without extraction yields finely defined tannins, supported by freshness that carries through the finish. A food-friendly wine to open after a few years in the cellar.

Les Cormiers is the estate’s top cuvée, a single-vineyard Saumur red made entirely from Cabernet Franc from vines around sixty years old, planted on hard limestone strewn with flint. The fully destemmed grapes ferment in concrete tanks before the wine is transferred by gravity into barrels in the underground cellar, where it spends a little over twenty-four months. Floral aromas of rose and peony take center stage, complemented by cherry and raspberry, with remarkably pure flavors. The palate combines depth, finesse, and a long mineral finish, with an elegance that places this cuvée among the great Loire Cabernet Francs.

Les Pouches blanc offers a Chenin expression of the same vineyard site. This Saumur white combines roundness and minerality in striking balance: aromas of white and yellow fruit, flowers, and almond lead to a full palate textured by barrel aging, followed by a taut, saline finish that gives the wine renewed energy. A food-friendly white to serve with fish in sauce, sweetbreads, or chicken in a cream sauce.

La Perlée is the estate’s flagship white, made from Chenin vines sixty to ninety years old and labeled Saumur or, depending on the vintage, Vin de France. The fresh, saline, and opulent nose combines Chenin’s lively notes with a luscious richness from extended aging, while the palate reveals a dense texture and acidity that holds everything together. Made for aging, this rare cuvée benefits greatly from decanting or several years in the cellar.

Saut-Mignon is the estate’s Sauvignon Blanc cuvée, produced in very small quantities and generally bottled as Vin de France. Vinified without any additives and aged longer than is typical for this grape, it moves away from overtly varietal Sauvignon Blanc to offer a textured wine with citrus, white fruit, and a saline mineral backbone. An unusual, delicious white, perfect as an aperitif, with shellfish, or with lightly spiced dishes.
