An organic and biodynamic estate in Saint Aubin: Domaine Derain

Wines from Domaine Derain: buy at the best price

Dominique Derain, a trained cooper, founded his estate in 1988 in Saint Aubin in Bourgogne. A modest-sized estate of barely 6 hectares, yet immediately certified organic since 1989, the year of its first vintage. He left the Demeter association in 1997 because he refused to accept the doubling of membership fees, and felt he had nothing to prove. The certification can therefore no longer appear on his bottles, but the vine-growing methods have always remained the same.

Biodynamic preparations to stimulate soils of brown clay, crushed marble and ferrous earth, and horse ploughing on certain steep hillsides. In December 2016, Dominique Derain retired and handed over his estate to Julien Altaber, who had been working with him for many years. Continuity is therefore assured, and Julien Altaber is an excellent winemaker who has maintained the quality of the wines at Domaine Derain (Julien, advised by Dominique Derain, had in the meantime taken the opportunity to create the Sextant estate). One can say that the wines of Domaine Dominique Derain are among the star wines featured on the wine lists of Parisian bistros. At Domaine Derain, work is done in the vineyard and less so in the cellar: budding, topping, and trellising. Sprays based on plants, clays, rock powders, and even horn manure are numerous, ensuring healthy grapes with perfect ripeness. The harvest of whole and intact grapes is done in small crates, without the protection of sulphur. In the cellar, the grapes are destemmed (fully or partially), foot-trodden, then placed directly into wooden vats for fermentation. At the end of alcoholic fermentation, the wine is pressed and then goes into ageing. The fermentation of white Burgundies in oak barrels lasts between 1 and 8 months, after which the juices rest quietly on fine lees until the following harvest. The red Burgundies, meanwhile, are aged for 12 to 18 months in wooden vats. The range of wines from Domaine Derain includes a white Vin de France named "Allez Goûtons blanc", a red Vin de France: "Allez Goûtons rouge", a Bourgogne Aligoté, a Bourgogne chardonnay "La Combe", several Saint Aubin whites and reds including the famous Premier Cru St Aubin 1^er Cru en Rémilly, close to the celebrated Burgundy Grand Cru Montrachet, whose characteristics make it a superb, very thoroughbred and age-worthy wine that approaches the level of certain Puligny Montrachet. Also a Mercurey red "la Plante Chassey", which, with a few years of cellaring, will reveal itself and satisfy even the most demanding lovers of biodynamic, additive-free wines.
