All wines from the Saint Aubin appellation in Burgundy

Saint-Aubin wines are Burgundies from the Côte de Beaune, produced in a discreet valley nestled between Chassagne-Montrachet and Puligny-Montrachet, just a few hundred meters from Montrachet. This village-level AOC is primarily white wine country: Chardonnay accounts for roughly three-quarters of the plantings, with Pinot Noir rounding out the palette with reds of firm structure and forthright fruit. The gustatory signature owes much to the altitude and the very stony soils: pale gold color, aromas of white flowers, citrus, and marzipan, a palate that is both round and taut, closing with a chalky salinity that evokes the great white wines of the neighboring appellations. With thirty climats classified as premier cru and prices well below those of Chassagne or Puligny.

Where is the Saint-Aubin appellation located?

The appellation is located in the Côte-d'Or, to the south-west of Beaune, entirely within the commune of Saint-Aubin, which also includes the hamlet of Gamay. The vineyard sits set back from the main escarpment of the Côte de Beaune, on the slopes of a dry, long and winding valley that cuts deeply into the inland plateaux and forms a south-facing amphitheatre around Gamay. The delimited plots occupy the best-exposed hillsides, between 300 and 430 metres in altitude, principally on the left bank.

This vineyard covers approximately 170 hectares, of which nearly 125 hectares are classified as premier cru — a proportion unmatched anywhere in Burgundy. The neighbouring appellations are prestigious: Chassagne-Montrachet to the south, Puligny-Montrachet to the east, Santenay and the Maranges further down, La Rochepot and the Hautes-Côtes de Beaune upstream. Certain climates, such as En Remilly and Les Murgers des dents de chien, directly border the hillside of the grand cru vineyards Chevalier-Montrachet and Montrachet.

History of the Saint-Aubin appellation

The history of this cru begins with its valley, an important communication route attested before the year 1000 and controlled during the Middle Ages by a fortified castle situated in Gamay, the hamlet to which tradition attributes the origin of the name of the gamay grape variety. The production of fine wine there is probable from this period onwards, particularly on the hillsides close to the hamlet. From the 15th century, wines known as Beaune spread throughout Europe, and in the 18th century the Beaune négociants organised their commercialisation on a large scale.

The classification by the Comité de viticulture de l'arrondissement de Beaune in 1860 ranked each climate in the commune planted with fine grape varieties. Up until the 1930s, however, these wines were sold under the prestigious names of Volnay, Pommard or Beaune, a practice brought to an end by the creation of appellations d'origine: the AOC was recognised by the decree of 31 July 1937, the list of premier cru classified climates was established in 1943 and the parcel boundaries were defined in 1977. The current specifications were approved by decree in December 2011 and subsequently amended in 2013. Since the 1990s, the rise of chardonnay and the arrival of a generation of highly demanding winemakers have propelled the name well beyond its borders.

What are the terroirs of the Saint-Aubin appellation?

The terroirs rest on a succession of Jurassic limestones and marls, remarkably legible from one slope to the other. On the left bank, exposed from south-east to south-west, the base of the slope consists of the platy limestones of the Callovian — the famous Dalle nacrée — surmounted by a thick Oxfordian sequence alternating limestone beds and marly levels, with the summit plateaux exceeding 450 metres. On the right bank, the lower slope rests solely on the Dalle nacrée. These substrates are frequently masked by spreads of scree, clays and silts.

The soils are weakly developed, carbonated, thin and highly draining, stony and lean on the upper slopes, deeper and more clayey on the terraces and at the foot of the slopes, which naturally limits yields and advances ripeness. The cool oceanic climate, with around 750 millimetres of rainfall per year and an annual average temperature of 10.5°C, becomes cooler moving upstream along the valley, offset by aspect and optimal drainage. Among the thirty classified climates, En Remilly, Les Murgers des dents de chien, La Chatenière, Le Charmois, Les Frionnes, Sur Gamay, Derrière chez Edouard and Sur le sentier du Clou represent the most reliable values.

What grape varieties are permitted in the Saint-Aubin appellation?

The permitted grape varieties are chardonnay and pinot blanc for the whites, pinot noir as the principal variety for the reds, supplemented by chardonnay, pinot blanc and pinot gris on an accessory basis. The latter are tolerated only in co-planting, up to a limit of 15% per parcel, so that virtually all the reds are pure pinot noir. Chardonnay, which is by far the dominant variety, is preferentially planted on the slopes downstream in the valley and around Gamay, which are planted almost exclusively in white.

On these stony soils, chardonnay yields straight, saline wines with aromas of citrus, white flowers, fresh almond and flint, which ageing rounds out without ever weighing them down. Pinot noir, planted throughout the vineyard, finds a fresh expression here, centred on cherry and small dark berries, with an acidity that is characteristic of the valley's style. The minimum planting density is set at 9,000 vines per hectare and irrigation is prohibited.

What are the different styles of Saint-Aubin wines?

Two colours are produced, with a clear dominance of whites — around 6,200 hectolitres per year against 2,000 for the reds. The whites display a pale gold colour and combine elegance with a rounded texture, with notes of honey, marzipan and, with age, spiced nuances; the premier crus add a touch of minerality and a genuine capacity for ageing. The reds, with their deep colour, combine a solid tannic structure, well-defined fruit and a vivacity that makes them easy to drink, with the premier crus developing notes of chocolate and spice over the years.

Winemaking follows the most classic Burgundian methods: gentle whole-cluster pressing, fermentation and ageing in barrel for the whites — typically in 228 to 350-litre pieces with a measured proportion of new oak — and moderate macerations for the reds. The specifications require ageing at least until 15 March following the harvest, with most producers ageing for twelve to twenty months. In terms of food pairing, the whites accompany oysters, scallops, fish in sauce, snails, chicken in cream sauce, gougères and Comté; the reds pair well with fine charcuterie, roast poultry, veal with morel mushrooms or a washed-rind cheese.

What are the best vintages of Saint-Aubin?

Reference vintages from the past thirty years favour cool or perfectly balanced years, which are more favourable to hillside whites. For whites, 2002, 2008, 2010, 2014, 2017, 2019, 2020, 2022 and 2023 provide solid benchmarks — 2014 and 2017 for their classic tension, 2020 and 2022 for the rare combination of ripeness and freshness. For reds, 2005, 2009, 2010, 2015, 2019, 2020 and 2022 offer the substance and structure needed for genuine cellaring.

The more modest or challenging vintages call for careful selection by domaine: 2003, marked by the heatwave; 2011 and 2013, more uneven; 2016 and 2021, hit by spring frost yet capable of producing taut, distinguished wines in very small volumes; and 2024, tested by frost, hail and severe downy mildew pressure. In practical terms, the whites from 2018, 2021 and 2023 are drinking well today, while the premier crus from 2019, 2020 and 2022 will clearly benefit from a few more years in the cellar.

What are the best domaines in the Saint-Aubin appellation?

The most sought-after domaine in the appellation is unquestionably Domaine Hubert Lamy, run by Olivier Lamy since the mid-1990s across 18.5 hectares, within a family that has been present on these slopes since 1640. Its hallmark lies in very high-density planting — up to 30,000 vines per hectare in one parcel of Derrière chez Edouard — minuscule yields and ageing in demi-muids that yield crystalline whites of spectacular length. The monopole Clos du Meix, Clos de la Chatenière, En Remilly and Les Murgers des dents de chien now change hands at prices comparable to premier cru Puligny, in strict allocations. Pierre-Yves Colin-Morey, who set up with Caroline Morey after leaving the family domaine in 2005, farms thirteen hectares and stands as the second benchmark: whole-cluster pressing, minimal settling, extended ageing and wax-sealed corks produce wines of great distinction, with the En Remilly cuvée ranking among the most sought-after whites on the Côte de Beaune.

Domaine Marc Colin et Fils, founded in Gamay in the late 1970s and now run by Damien and Caroline Colin, remains the leading estate in the village, with around twenty hectares, more than twenty-five appellations and a plot of Montrachet grand cru that speaks to its standing. Its cuvées En Remilly, La Chatenière, En Montceau and Le Charmois offer a precise and comprehensive reading of the local terroir. Domaine Jean-Claude Bachelet et Fils, led by the next generation of the family, has established itself among enthusiasts with finely chiselled whites from En Remilly and Les Murgers des dents de chien, in a taut, lightly oaked style. Domaine Larue, spanning around fifteen hectares divided between Saint-Aubin, Chassagne and Puligny, produces reliable and generous premier crus, notably Sur le sentier du Clou and Les Frionnes.

 Domaine Bachelet-Monnot, based further south but with ownership in En Remilly, has risen in just a few vintages to become one of the sector's rising stars for the purity of its whites. Finally, Domaine Joseph Colin, created in 2017 by one of Marc Colin's sons on a small surface area, remains a confidential address but confirms, vintage after vintage, the depth of local talent.

How long should a Saint-Aubin wine be kept?

The ageing potential depends on the colour and the appellation level. A village-level white is ideally enjoyed between 3 and 8 years, a premier cru between 5 and 12 years, with the finest climates such as En Remilly, Les Murgers des dents de chien and Derrière chez Edouard holding effortlessly for 15 years in great vintages. Village-level reds are best appreciated between 3 and 8 years, premier crus between 6 and 15 years, allowing time for their tannins to integrate and for notes of chocolate and spice to emerge.

A cellar kept between 10 and 14°C, at around 70% humidity, away from light and vibrations, with bottles lying on their sides, remains the best guarantee — taking care to open the whites before they reach their absolute limit. When serving, a young white is best enjoyed between 11 and 13°C; a brief decant of fifteen minutes is sufficient to open up recent, reductive vintages, while more mature cuvées are served without decanting. Young reds benefit from decanting for 30 to 45 minutes and are best enjoyed at around 15 to 16°C.
